We are getting loads of eggs from our chickens. I'm looking for recipes to use them up beyond the obvious omelette, quiche etc.

There’s a nigella Malay egg curry recipe I love. Nasi goreng with chopped up omelette on top. Khao suey (northern Thai/ mayanmar noodles in soup with hard boiled eggs). Bibimbap (Korean rice bowl). Bobotie (South African, bit like shepherd’s pie but the topping is like a savoury custard)

I came to also say carbonara. Whisk 4 eggs, add a bag of grated Parmesan and pour over hot pasta. If you want to make it fancy follow Gino’s recipe.

Quiche, omelettes, egg custard tarts, custard and meringue. All can frozen.

Huevos rotos is a delicious and easy dinner - add ndjua! Eggs in purgatory for brunch or indeed lunch.

Back on the Nigella theme I'm very tempted to do her devilled eggs

Shakshuka is one of our favourites.
Baked tortilla
Muffin tray greased with a slice of ham in the bottom and an egg broken into each muffin hole and grated cheese sprinkled on top then baked.

This takes me back to when the DC were younger and were all still at home. We had a glut of eggs and I challenged myself to 2 eggs/person per day minimum without any of them noticing.
So 14 eggs a day for a week.
None of them noticed.
We had egg and bacon muffins or eggs on toast for breakfast most days.
Some packed lunches were obviously eggy (egg Mayo sandwiches or quiche or scotch egg quarters) but not every day. I made egg custard tarts, fairy cakes, even meringues. My attempt at Chinese food ( including egg drop Chinese noodle soup and something dressed with 5 spice omelette), toad in the hole. By the end of the week we'd eaten over 30 eggs and none of the Dc spotted it.

There's a delicious low carb recipe for cheesy muffins but it's great for using up eggs:

60g Very cold butter cubed
200g Ground almonds
6 Cold eggs
Large handful of grated cheese
Chives / herbs

Pre-heat oven to 180 and set out 10-12 deep muffin cases.

Blitz butter and almonds.
Whisk in eggs
Fold in cheese & herbs

Do all this as quickly as possible so shock of heat from oven makes them rise. Take about 20 minutes and are very very filling, I love them with butter or marmite, ham or cream
Cheese is nice but a real treat is peanut butter.

Let them cook before unwrapping and I usually half and toast them for extra oomph

Not really a recipe as such but a tik tok one

Make an omelette
Just before it's set on top, add a wrap to the top
Flip it so the omelette is on top, wrap on bottom
Add cheese/bacon/tomatoes/whatever and fold in half, flip it again so it's toasted on both sides
I eat this all the time Grin dunked in brown sauce

Also scrambled eggs and bacon in tortilla wraps are lovely

Make cauliflower cheese, broccoli cheese, macaroni cheese..... etc and create egg-sized hollows - brake an egg into each hollow and bake as usual.
