We are getting loads of eggs from our chickens. I'm looking for recipes to use them up beyond the obvious omelette, quiche etc.

If you separate the yolks and whites you can freeze them.

Coddled eggs are lovely & as you can add whatever you like, you can change them up to suit using up whatever else you have to hand.

Pakistani egg and potato curry.
Baked french toast (sweet or savoury)

Make cakes and freeze them.

Go great on tomato based casserole- chicken,sausage,lentil etc just last ten minutes crack eggs all over the surface for last few mins cooking.
Especially good on sausage and bean casserole
