Not a recipe, but I’ve cut up and frozen mine to crumble over winter salads and soups.

I was going to say that! My sister makes a nice pear and Stilton salad with walnuts and a raspberry vinaigrette dressing.

We had this last night with jacket potatoes
Honey and balsamic drizzle, toasted walnuts

My sophisticated recipe is warm it up on the stove and then eat it off the end of ready salted walkers French fries

Maybe just me..

Stilton and potato soup made from baked potatoes so they are really potatoey. Lovely with French bread.

Pasta sauce - soften onion,add Passata and fresh rosemary,warm through then crumble in Stilton. You can add other veges and chicken to make it more substantial.

Now, what to do with the other half .

Use it to stuff thick pork steaks.
Have it on toast with thinly sliced pears and chopped walnuts.
If you have whole wedges just wrap and freeze, defrost each wedge as you want it.

Don't be tempted to do what I did and just eat 200g yourself in one evening. It was delicious but I had weird dreams!

Another vote for broccoli and Stilton soup - love it. It's also very nice on burgers

Oh and with steak

Freeze it

Potato, onion and Stilton rolls, like sausage rolls.

Caramelised leeks with crumbled Stilton and walnuts.

The other thing I like is pasta with bacon, mushroom, broccoli and Stilton.

If you have a whole Stilton that you've been scooping upend it over a whole cauliflower and bake in the oven, it is magnificent.

Gnocchi, spinach and Stilton

Melt into crème fraîche or cream and serve poured over chicken and asparagus

Crumbled into vegetable soup.

Into a salad with walnuts, balsamic and a touch of honey.

Makes a lovely addition to risotto.

We didn’t have loads left, but we used it for posh cheese on toast to go with soup! I used sourdough bread with some chutney on and added stilton on top before grilling. Simple but delicious!

As @TheOrigRights said! Just eat it! The most delicious cheese of all. How is there any left!!!!!
