Using up pesto - not pasta

I'm in a bank hol slump and have no brain power

Most of a jar of (good) pesto to use up. Any ideas please?

This is our favourite-was once on a Waitrose free receipe card at the checkout years ago it’s brilliant.

Dh has it on salmon, chicken, or stirred into cous cous

Scrape it down into the jar so there's none in the sides and pour olive oil over, it lays much longer that way and you won't have to use it up so quickly! You can also freeze it in ice cube trays so you've got small amounts to hand.

It's quite good mixed with mayo in a chicken sandwich.

I like it spread over salmon and baked, served with puy lentils and asparagus.

Pesto pinwheels with ready rolled puff pastry and cheese.

What constitutes 'good' pesto?

Calzone stuffed with pesto, rocket and ricotta. Alternatively stuffed with chopped ham, pesto, mozzarella and pizza sauce.

You can freeze it in ice cubes

Oooh yes spread it on salmon, cover with breadcrumbs and seasoning and bake.

A big dollop in tomato or other vegetable soup when serving

Mix in to creme fraiche to make a sauce with chicken - add cherry toms, garlic

Smooth over salmon fillet and bake or loosen with butter/ oil if you are frying white fish fillets.

Pre-rolled puff pastry. Spread it out. Coat in pesto. Add tomatoes, halloumi, asparagus, peas.

Oven. Bang. Lovely tart.

Oh god these sound LUSH.

Smear it all over a chicken with a lemon up it's bum and use wine to make a pesto gravy. All over salmon is popular in this house, or use it to sauce gnocchi with broccoli and roasted tomato.

Roast brocoli, chopped onions, tomatoes and peppers with a splash of olive oil and salt and pepper. Mix the pesto through then add a block of halloumi, cubed. cook for about another ten mins

Serve with boiled rice

Use it as salad dressing

I saved this recipe for pesto chicken stew with cheesy dumplings from an MN thread ages ago and made it in December. It was very good and I plan to do it again. Didn't have red pesto so used a mixture of green pesto and sundried tomato paste.

(Having looked at the recipe I have no idea why I thought it needed red pesto. As you were.)

Pesto mash is fabulous. You can use up quite a bit of pesto too!

We put it in a leftover chicken and vegetable risotto.
