Using up pesto - not pasta

I'm in a bank hol slump and have no brain power

Most of a jar of (good) pesto to use up. Any ideas please?

Pesto and cheese stuffed chicken breast is delicious. Pesto on toast with eggs is lovely.

Toss steamed vegetables in it - I like broccoli, green beans and new potatoes.

Slice open chicken breasts, smear it inside, wrap in prosciutto or bacon and oven bake.

Toasties was going to be my tip too. Really lovely. Also, it is actually very good in non-toasted sandwiches too esp with cheese or chicken.

Or make a nice minestrone and dump a spoonful in each bowl.

We usually always use the rest of a jar or fresh pesto by making pesto, mozzarella or whatever cheese I have in and tomato or onion toasties for lunch. Goes well with tomato soup! Also I have made it into a dip with cream cheese or I use it on mixed veggies that Are roasted.

Use at will.

I love it on pizza with red onion and goats cheese

Chicken with pesto in filo pastry.

Flatten chicken breasts, brush with pesto. Wrap in strips of (bought) filo pastry. Brush with a little olive oil

Bake in a hot oven (210 / 220 deg) for about 20 mins. Serve with over-roasted vine tomatoes.

(Make sure to flatten the chicken tho, to ensure it cooks fully in that time).

My go-to store cupboard soup is pea and pesto:

Frozen peas
Veg stock
Generous knob (or slice) of butter
Clove or two of garlic, peeled and chopped in half
Salt/pepper

Just cook the peas with all the above ingredients (including the raw garlic), then blend when the peas are cooked. Add at least a dessert spoon of pesto (probably two). Serve. Delicious!

I also smear pesto on a salmon fillet and bake in the oven - also quick and delicious.

Pesto roast potatoes are good.

Meatballs in a simple tomato sauce, add fresh mozzarella. Put them in a burger bun with pesto spread on (really good)

Pesto eggs (tiktok recipe but also nice)

Also on a chicken, rocket, tomato sandwich.

Ah, also pesto bread pinwheels - bit like cinnamon buns but with pesto. Bit more faff but yum.

Stir into boiled new potatoes and use to make stuffed peppers either some feta or better still, let the potatoes go cold then add pesto and a little mayo to make a really good potato salad.
Or drizzle over roasted Mediterranean vegetables with cous cous and halloumi.

I make a marscopone sauce with garlic, mushrooms and bacon lardons and a few tablespoons of pesto. It's to die for over a chicken breast or whatever else you might fancy.
