Substitute for fried eggs for breakfast

MrsJamPanMan · 10/11/2021 21:08

For the last five years or so I have been having two fried eggs for breakfast with either fried mushrooms, courgettes or spinach. This reduces my tendency to get really severe sugar crash hunger. The only drawback is that having so many eggs for breakfast pretty much precludes the possibility of eating eggs at other meals, and the occasional omelette for lunch might be nice.
I don’t really want to eat any more meat or fish than I do already. It needs to be filling and very low carb. Any ideas?

Scrambled tofu?

onepieceoflollipop · 10/11/2021 21:18

Greek yogurt - perhaps with a few raspberries or nuts?
Cheese with avocado
Bacon, tomatoes and mushrooms

WeAreTheHeroes · 10/11/2021 21:18

Skyr and protein powder. I add frozen fruit to mine.

Halloumi

Longdistance · 10/11/2021 21:20

Poached eggs. I bought a poacher pan from Argos and it’s brilliant.

I like a savoury breakfast too OP.
I quite often have a small bowl of last night's leftovers without the carb for breakfast.
Are beans high carb? I sometimes have rice and quinoa with black beans or kidney beans and veggies.
Chia seeds are low carb too. The night before, pop some in a bowl with your milk or juice of choice plus grated apple and nuts / seeds, leave in fridge to swell overnight.

Thanks, all very much. There is quite a bit to go on here. I have googled skyr.
Any particular recipe for scrambled tofu. I think I tried cooking tofu as a teenager, but not since.

I like smoked tofu, just sliced and fried. I dredge it in cornflour but you don’t have to. It would go well with your fried veg.

I usually make a smoothie with berries, Greek yoghurt, whey powder, and milk.

Heck do nice vege sausages.

mumwon · 10/11/2021 22:02

grilled bacon sandwich? with brown sauce
baked beans on toast
dhal & puree (potato & flour pancake with cumin seeds) & bbq sauce or pickle
cold pizza from the night before
a la Scandinavia cold meats & cheese

mumwon · 10/11/2021 22:03

sorry missed low carb & not wanting meat!

Why does it preclude you eating eggs later? For a long time I ate 2 poached eggs for breakfast with spinach and then had an egg white based omelette for lunch everyday of the week.

Tofu tastes best straight out of the packet in my opinion. You can get silken or smoked tofu and make a kind of dip out of it with spices and serve with your choice of veg.
MrsJamPanMan · 10/11/2021 22:44

I have some halloumi I will try tomorrow before shopping for other stuff.
Thanks

I replaced one egg with halloumi. It was tasty and filling (so far). It’s maybe a little salty to have more than about an ounce at a time.
Thanks again

Try quark and marmite with beans on toast. Yum

ODFOgrinch · 11/11/2021 11:54

Also missed the low carb: quark with marmite on cloud bread with avocado.

Greek yogurt with almond/peanut butter and blueberries and or raspberries

MrsArchchancellorRidcully · 11/11/2021 12:05

Overnight oats made with natural full fat yoghurt abs add fruit in morning. Oats might be higher carb but are so so healthy and good for your heart.

theneverendinglaundry · 11/11/2021 18:15

Scrambled tofu is lovely and easy to make. You can add veggies (anything you have in the fridge or leftover). Fry the veggies first, then remove from the pan and do the tofu. Then add the veggies back to the pan once the tofu is cooked and flavoured.

MrsJamPanMan · 11/11/2021 21:55

I will try tofu next.

I tried frying finely chopped tofu with a small amount of halloumi and mushrooms. It worked reasonably well.
Thanks

Halloumi goes really well with tomato and red pepper so try adding those

Any kind of fresh white cheese would work without being as salty as halloumi. Queso blanco for example but it’s not that easy to get here.

Quark/kvarg might be worth a try.

Hummingbirdcake · 16/11/2021 17:39

Another recommendation for scrambled tofu. I use silken tofu, lots of seasoning and a bit of turmeric to give it a nice golden colour.

MrsJamPanMan · 16/11/2021 18:16

Thanks. I will shop at Waitrose next time and see if they have queso blanco and silken tofu. I thought the advantage of halloumi was it doesn’t melt whereas almost everything else does.
