What can I do with butternut squash that's not curry?

Just that really. I often make curry, but haven't really got any go to recipes for butternut squash and would like some inspiration please.

Soup. I made some today. Roasted it first then cooked with onion and celery, garlic, stock and baharat spice mix. Blended smooth and a load of goats cheese crumbled on the top. Was nice

Risotto, quiche, pie, soup, wraps, salads. Ask every restaurant near me, the feckers seem to think it is a pre requisite of a vegetarian meal.

Soup

Half lengthways, or cube and roast. Great with other root veg, tomatoes, feta, chilli, chickpeas.

Roast with garlic and onion or fennel, mix with kale for a salad.

With sage for a risotto

Loads of things!

Tip: microwave for 2 mins and then cool for a few mins before peeling/chopping. Makes it easier.

I roast it, then add to a nice cheese sauce (blue cheese is great if you like it) and have it over pasta

I make mash with it and serve with a roasted pork loin rolled in dukkah (this recipe)

Marinade cubes in olive oil and ground allspice. Roast for 30 minutes.
When cooling, toss with chickpeas and spinach or rocket so that it wilts, and serve as a warm salad. Dress with lemon juice, tahini, olive oil and salt/pepper.

Make a wellington instead of using beef.

Soup - goes well with red lentils and but you have to roast the squash first, preferably with red peppers.

Roast on squares of puff pastry to make a tartlette with red pepper and feta or whatever else takes your fancy.

It's also worth pointing out that a butternut squash will keep on a shelf for months and months and months. I've just cooked one that I bought in March and it was fine.

We've got a battalion of them in the garage for what started out as a Brexit stockpile, became a corona stockpile, and is now insurance against the impending total collapse of the food supply chain.

We like to do:
Risotto with sage, butternut “Mac and cheese” (roast the squash in the oven, then blend with veg stock and some milk to make a sauce), butternut and cranberry tagine (BBC recipe)

Cubed and roasted with onions, garlic, cumin and sausages ( veggie sausages I'd vegetarian).

In triangular puff pastry parcels with cumin.

Cook it whole in the oven, then scoop out the insides, mix with stuff, put back in skin and under grill.

Stuff depending on stastes/dietary restrictions:

Nuts and veg for vegans
Blue cheese and walnuts for veggies
Bacon and cheese or leftover bolognaise for meat eaters
Salmon and veg for pescatarians
All with optional rice as well if desired

I love this Japanese steamed squash recipe as a side (with almost anything!) - quick, easy prep and cook, and it’s reasonably healthful. The name says pumpkin but it works fine with butternut squash or kabocha: allrecipes.co.uk/recipe/12887/japanese-steamed-pumpkin.aspx..
