What can I do with butternut squash that's not curry?

Just that really. I often make curry, but haven't really got any go to recipes for butternut squash and would like some inspiration please.

This is a favourite in our house:

Chicken thighs, cubes of butternut squash, wedges of red onion, cumin and harissa - large baking tray.

Roast until chicken is cooked and skin crispy, then toss in some cubes of feta. return to the oven for 5 minutes so the feta warms up and softens slightly.

Serve with veg or a green salad.

You can make cheesecake.

I adapted this receipe. It was so good. I roasted it in brown sugar first

Roast it. Cut into lengths, sprinkle with ras el hanout and chilli flakes, douse liberally with olive oil and add some salt. Serve with a yoghurt, garlic, lemon and tahini sauce. Especially nice had with lamb. I usually do couscous as well.

I used to make butternut squash muffins. I think it was a Jamie Oliver recipe. They were great.

One thing - he said not to peel the squash, because the skin would caramelise and be delicious - but I found it was only ever chewy and horrible. I might have been doing it wrong somehow, though.

Roast in chunks with garlic, with red onion, cherry toms and chorizo. Stir through pasta with a dollop of creme fraiche and loads of parmesan.
