Other than rice pudding, what can i do to use it up?

Have you got a smaller bottle still? You can freeze it. Or pour some into ice cube trays and freeze. Always got emergency milk then.

You can freeze milk, if you aren't going to manage to use it all.

If you’ve only just opened it it should be fine for at least a couple of days, we’ve used milk past it’s date and it’s always been ok. Just smell it before each use!

Milk always keeps for way after the use by date, in my experience.

Sadly my freezer is pretty full of stuff that’s probably never going to be eaten

I’m thinking a cheese sauce, We can have Mac and cheese for dinner (it is their favourite, so a very good suggestion) and I can keep some for cheesy leeks for Sunday’s roast.

Custard is also another good shout, I have some cake that would go well with it and may stand a better chance of being eaten than rice pudding.

Bread and butter is also a good suggestion, I’ve some croissants that are being ignored every time I offer them.

I make paneer with excess milk, though that probably only works if you own cheesecloth! I then freeze the cheese

Whilst this is true, if the milk has reached its use by date, it is likely to turn fairly soon so it needs using before it gets to that point or it is wasted.

Scones - both sweet (with raisins) and savoury (maybe cheese?) versions - and they're freezable.

Cheese sauce for a lasagna - make a nice batch to have tonight and freeze cooked lefotvers, and also make up a couple to freeze before cooking for other easy nights.

Poach smoked fish and make a white sauce with that milk to accompany the fish with potatoes and steamed veg. Or make into a pie with brocolli florets, flake the poached fish, cover in the white sauce and top with mashed potato (with a handful of breadcrumbs over the top for crunch). Which is another dish that can be frozen before or after the oven cooking part.

Blush sorry just saw freezer is full - is there anything "less" useful in there that you could either sacrifice, or defrost for today/tomorrow in favour of more useful meals/portions?

I agree However, the reason i opened it was i had to throw 2 pints away this morning with the same use by date after ruining my coffee by using it.

and i never waste coffee.

Milk is one of those things in this house we are either getting through so much we need our own herd or very very little. It depends if the kids have decided to have hot chocolates/ milkshakes / cereal.

I also feel bad for the cow that made it. Grin

@DanceForeverUnderTheLights dont do that, i haven't enough in to sustain them once they get through the milk.... i am currently envisaging me sat in the kitchen all the cupboards bare and surrounded by wrappers. mascara running down my face going sobbing "theres nothing left"
