What to have with Roast Chicken... but not a roast!

Really fancy roasting a chicken but can't be arsed with all the trimmings for a roast.

What else goes well? Will it be dry without some kind of sauce?

What about rubbing some spices into it and spatchcocking it and serving with couscous and salad. Or something like sweet potato mashand corn on the cob?

Chicken doesn't necessarily need a sauce. I usually mix butter with herbs and push it under the skin on top of the chicken so as it cooks the butter melts and the meat stays really moist.

I often do mash, a couple of easy veg and gravy (from granules).

It would also be nice Nando’s style with rice, corn on the cob, salad, maybe in wraps with Mayo etc…

Roast with lemon in the cavity and have with a big Greek salad or couscous type salad

I love it with rice and salad (the Tilda flavoured microwave rices are nice) or a jacket potato with lots of butter and coleslaw. The Nando's peri peri sauces and marinades are nice on the chicken if you want a bit of flavour. Corn on the cob is good as a side too, I microwave or boil it then blacken on a griddle. We have this pretty much weekly in our house as everyone loves it and it's easy!

Salad and ciabatta! Or you can do a sort of spring style roast with boiled new potatoes, tenderstem broccoli and asparagus.

We love the jamie oliver tikka chicken roast which is basically a chicken rubbed with tikka paste roasted directly on the shelf above a tray of cauliflower and potatoes. Very easy and the shelf and pan go in the dishwasher.
