What to have with Roast Chicken... but not a roast!

Really fancy roasting a chicken but can't be arsed with all the trimmings for a roast.

What else goes well? Will it be dry without some kind of sauce?

McCain Gastro Chips and rocket salad

This is a very South African dish, so you may not know it, but it is really nice.

You can cut the chicken into pieces but I do sometimes cook it whole.

Mix together a cup of orange juice (or mango, apricot, or any fruit juice you have, not berry!) , a cup of chutney and half a cup of mayonnaise. Mix together and coat the chicken, bung it in the oven. Then have it with rice as it makes a nice sauce to soak into the rice. With salad. Quick and easy.

Rubbed with jerk seasoning, Rice and peas, salad, coleslaw.

Throw new potatoes in a roasting pan with onion, peppers, chorizo, oregano and grated orange peel. Rub chicken with smoked paprika and cumin, stuff half an orange inside.

Salad and new potatoes even easier salad and roasties.

We used to go a little place near where the Ils had their holiday home (in Greece) and they ONLY served roast chicken with french fries, greek salad and huge ice cold beers. literally served nothing else that was it.

God, that sounds amazing. I can almost taste it....😋

Gnocchi (e.g. Nigella’s roastini, or just put in the tray under the chicken as it cooks)
Creamed leeks
Dhal or similar lentil curry
Ratatouille
Roasted Med veg
Nice bread, butter and salad
