Help, I'm drowning in eggs

I bought a dozen yesterday.

Last night neighbour popped round with half a dozen that her hens had laid.

This morning I woke to another dozen eggs and some other food in the hall with a note from neigbour on other side saying they were going away for 10 days and she wanted to empty her fridge.

I 30 eggs.

We had scrambled eggs for breakfast and I've made a big pancake batter for later but even then, I've still got 23 eggs...

I'm not a great cook, we can only eat so many eggs.. any ideas please?

They keep for yonks.

Omlette uses loads esp for family I do 7 egg ones.

Tortilla (Spanish omlette ) is lush.

Cake? I've not got a sweet tooth but some use loads.

On hols we were getting through about 10 a day Grin you can do it op! And they keep for yonks anyway

Boil some and then keep them in the fridge for snacks, egg sandwiches, and potato salad. There is only DH and me and we can polish off 6 hard boiled eggs very quickly. They keep a long time.

As pp said, there’s no rush to use them - they will last for weeks and weeks and weeks past the date.

Ooooh, the lemon curd idea above reminded me! I made cranberry curd one year, a huge huge jar of it, and tipped in a pot of pink edible glitter for good measure. It was amazing. Tasted delicious, and I had pink glittery toast all through Christmas.

Pancake batter freezes well - we keep squeezy bottles of them. Just give it a good shake before using.
