Help, I'm drowning in eggs

I bought a dozen yesterday.

Last night neighbour popped round with half a dozen that her hens had laid.

This morning I woke to another dozen eggs and some other food in the hall with a note from neigbour on other side saying they were going away for 10 days and she wanted to empty her fridge.

I 30 eggs.

We had scrambled eggs for breakfast and I've made a big pancake batter for later but even then, I've still got 23 eggs...

I'm not a great cook, we can only eat so many eggs.. any ideas please?

Frittata for lunch or dinner.

Pavlova with the whites and icecream with the yolks.

Make egg mayonnaise for sandwiches for the next couple of days.

Whenever we end up with too many eggs I make a big batch of egg muffins (with spinach, red onion, pepper and cheese) for quick breakfasts and then freeze.

They keep a while in the fridge. Don’t panic yet.

How many in your household? Scrambled eggs for one person here is 2 whole eggs and 2 egg whites each, so we would need 8 eggs for that.
Big frittata/ omelette and meringues will use up the rest.

They will last for weeks, just use them as you normally would and it's a bonus that you won't have to buy any for a while.

But yes if you've got room for them they will last weeks! I only have to use up a load at once sometimes as we get them delivered every Monday so if we have a few weeks where we don't eat many I very quickly get over run!

Have a word with the neighbour or you'll be her dumping ground for surplus eggs forever! I have hens too and sometimes have a surplus, but I offer them to people, I wouldn't dream of just leaving them outside someone's house whether they want them or not. And leaving food from her fridge because she's going away is very cheeky unless she'd arranged with you to do that.

They keep for weeks, I have chickens too and sometimes end up with a glut of eggs (I don't keep mine in the fridge though unless I have washed them).

They will definitely keep for a long time. But it only takes one quiche/tortilla etc and one big eggy breakfast to use a surprising number up. At one point in lockdown we found ourselves in a similar situation - going from famine to feast - but they were gone pretty quick.

My DC love an egg surplus as they're more likely to get pancakes and yorkshire puddings!

Make batter and freeze it for pancakes another time.
Victoria sponge = 5 eggs, 10oz flour, 10oz sugar, 10 butter . Make two, one for now, one for the freezer.

I can’t stomach eggs for breakfast lunch and dinner! But I can handle ‘hidden’ eggs in pancakes and carbonara. I use one egg plus one yolk per person in carbonara.
