Doing my meal plan for this week and struggling for easy meal ideas that we'll fancy in the heat.

What are you all planning?

Salad!
Well stuff with salad, tonight tuna steaks with a balsamic glaze, last night lemon and garlic chicken skewers with flatbreads cooked on the bbq, the night before sticky mango cod, tomorrow Harrissa chicken with a cous cous, chickpea and roasted veg salad.

Might go for fresh pasta with cherry tomatoes, chilli, garlic and red onion one night because it takes less than 5 minutes to cook. Got the stuff to do a salmon, jersey royal and green veg traybake at some point. And Stilton stuffed field mushrooms, probably with an apple slaw.

In my defence, I do make a good range of salads!

I've gone completely off anything but salad TBH. I've always loved a good salad but in this weather I really can't eat much else. I had about 4tbsp rice for tea tonight, & salad.

I usually do a batch of potato/quinoa/pasta etc, eat some hot, & keep the rest in a pot in the fridge to grab with salad, until it's gone. Occasionally some meat or fish. More likely to have egg or cheese with it.

Things like burgers in buns, tacos, baked potato, pasta bake, toasted sandwich, pizza, with lots of salad

For dessert fresh fruit, I might make some jelly pots, fruit juice ice lollies, something like that.

Tonight (late) I batch cooked curry and put it in the freezer as all I've to do mid week is heat rice.

Also gammon (slow cooker)

But mainly chicken goujons and salad or baby potatoes with salad and of course bbq

Last night we had chicken tikka with yogurt and salad. The others had rice too: it was too much for me!

Last night was a watermelon/rocket/feta/olive/mint salad with grilled chicken skewers

Tonight it will be grilled salmon with a spiced rub with a fennel/mango salsa

Tomorrow will be a grilled veg with burrata and a pesto drizzle

IE, quick cooked things served room temp with lots of salady things

Last night we had a roast chicken with warm salad potatoes, tzatziki, cooked beetroots, french stick, olives, hummus and a bagged bistro salad.
Tonight will be baked ham with the left over potatoes from last night plus other salads bits.
Tomorrow we will be having some Cajun chicken breasts I bought reduced yesterday with more warm salad potatoes and broccoli.
We love couscous salads with whatever meat or fish we are having.

The important bit is making sure the gin and tonic is cold, and there is plenty of it Wink

I like this when it's hot;

Cooked cold soba noodles dipped into a cold broth made up with smoked tuna stock and kelp and each mouthful eaten with a pinch of julienne raw ginger and cucumber. Then I normally have chicken wings with it too.

It's cold, a bit salty, umami and healthy

Tonight I'm having avocado, mozarella and tomato salad with a bit of fresh basil and olive oil, probably some bread on the side.

Followed by a huge bowl of fresh cherries.

I'm making a rice pudding, to eat with fresh raspberries and cherries. It was the only thing I could think of that a) I fancied eating and b) I could find in stock in our rubbish local supermarket (virtually no salad there at all).

Update: I have burnt a rice pudding, to eat with fresh cherries and raspberries. It still tastes nice, but it is total stodge!

Hot kitchen is the problem for me, not hot food.
Curry, chilli etc - but from the freezer so I don't melt whilst cooking.
