"Sunday Roast" style special occasion vegetarian dinners

Hi All,

Looking for some suggestions for vegetarian special occasion or Sunday roast style dinners. I find that I'm lacking inspiration or a 'centrepiece' for those lovely family dinners where there's a big spread and everyone kind of helps themselves. I've made nut roasts and served with the yorkies and other trimmings but I can't keep depending on that!

Any other suggestions? Thank you!

I make a veggie haggis Wellington for Christmas dinner most years, I usually do a mushroom duxelles but if you aren't a mushroom fan spinach or beetroot (especially gold beet) also work. It's one of those cobbled together at 3am Christmas morning after wrapping Santa present jobs that's stood the test of time and I do sometimes for a Sunday roast too.

I spent this afternoon going through all the recipes that were popped into this thread with my Mum and I'm gonna have them over for the 'Pithivier' recipe in 2 weeks time... unless something else completely delicious comes up in the meantime!

@Snooks1971 I'm the exact same at the moment, just felt stuck in a rut with my cooking! Now I can't wait to start scheduling all these recipes and having dinner with family again

I'll post an update on the pithivier and hopefully we'll have more mouth watering recipe suggestions!

Just wanted to report back on the goodwill pie linked to above.

I found a variant recipe for it. bensfarmshop.co.uk/recipes/rainbow-goodwill-pie/ As the intro makes clear, this is a mash up between Anna Jones's recipe, another recipe for rough puff pastry and Felicity Cloake's recipe for nut roast.

What I made today was the recipe above, but with some filo pastry that needed using up instead of the rough puff or shortcrust pastry. I wouldn't do it with filo again as structurally I can see it would work better with a shortcrust or puff or rough puff pastry. The filo did the job of protecting the filling from drying out/burning, though.

The filling is indeed a lot of work, especially with the addition of making nut loaf, but it tastes great. Very filling!

@Fivemoreminutes1 Made the pithivier recipe you suggested for my parents this afternoon! It definitely didn't turn out as pretty as the pictures 🙈

But... first Sunday lunch in so long and it was lovely.

Served it with roast potatoes, roast carrot and parsnips, asparagus/fine green beans/tender stem broccoli with truffle oil and Parmesan... and the obligatory Yorkshire pudding! (Ginger and lime cheesecake for dessert!)

I'd give a 3/5 - very delicious, bit dry for the accompaniments I served... it was very tasty but not the showstopper I'm after! Gonna have another look through the recipes suggested here and schedule some for lovely family afternoons! Thanks so much and please add if you can! x
