"Sunday Roast" style special occasion vegetarian dinners

Hi All,

Looking for some suggestions for vegetarian special occasion or Sunday roast style dinners. I find that I'm lacking inspiration or a 'centrepiece' for those lovely family dinners where there's a big spread and everyone kind of helps themselves. I've made nut roasts and served with the yorkies and other trimmings but I can't keep depending on that!

Any other suggestions? Thank you!

If it's veg, not vegan then how about an asparagus tart/quiche type thing? Rich, short pastry, lots of eggs and cream and topped with roast asparagus.

I've never made a quiche but definitely willing to give that a go, we do adore asparagus in this house! What would you serve that with for a big family meal?

The Goodwill pie sounds amazing, though I'd buy the pastry.
Me and anything involving flour are not friends.

I'dput a big bowl of grainy salad with it, maybe warm with roast squash. It would be the perfect meal to have on my new garden table and chairs. Which have been rained on ever since I bought them....

With restrictions easing I've been so excited to have my parents, DP parents etc for a big family lunch but was worried about what I'd cook for predominantly meat eating guests These recipes have excited me! I think I'll invite them all 4 weeks from now so have plenty of time to prepare! Thanks so much all 🙌🏻

In my house it would end up being grey, lumpen, cracked and tasting like sadness.
The only pastry I can make is suet pastry.
I'm an absolutely terrible Baker, I even had a Kitchenaid to help but recently admitted defeat and gave it to Dd and her boyfriend who manage to make amazing bread, and cakes.

Veggie haggis is a mix of nuts, seeds, legumes and spices that mimics a real haggis, comes packaged as a sausage looking package and it says to cook it in a water bath but I prefer to fry it on a low heat and let the natural seed oils come out with the heat and make it slightly crisped.

The flavours come out even better like this. Kinda looks like stuffing when cooked and so nutritious.

In the past I've made it into a shepherds pie by adding gravy and some peas and carrots topped with mash potato

On the butternut squash and feta pie - the main changes I make are the pastry has caraway seeds in (I love caraway), it goes well with the squash and feta. I also chop the squash and feta a bit bigger than shown on those photos, I like it to be more visible. I normally add some kind of pastry lattice or weaving which I find is actually really easy to do but looks impressive!

I serve it with all the normal roast dinner sort of trimmings, although probably a bit less roasties and Yorkshire puddings and a bit more greens and veg. Sautéed cabbage goes well.

The Delia roulade is indeed delicious. I'd been meaning to try it for about 30 years since i first bought her Christmas book, and finally got round to it a few months ago. It was excellent. Leftovers were delicious too.

Other ideas - this is more of a summer centrepiece as you'd want salad with it, or at any rate not the traditional Sunday lunch veg. It's very easy and not too difficult or time-consuming to make. I love veggie haggis but can’t find it here. This tastes really like the macsweens one I think, but I haven’t had it in ages. I’ve tried a few other recipes and they didn’t come close. Also I used dried beluga lentils, about 120g and added some more stock, the stock I used was a knorr stockpot.
You can turn this into a centre piece by wrapping it in puff pastry with some chutney spread on. Or a nice moist nut roast wrapped in puff pastry makes a lovely centre piece.

Oh and I tend to use a whole punnet of button mushrooms cut really small and sometimes add a grated courgette and an extra carrot for extra veg and adds moistness.

Like a previous poster, I use butternut squash for the ultimate flexible meal.

First roast whole in the oven, then slice in half lengthways an scoop out the flesh, mix with choice of fillings, put back in oven and grill the top.

The fillings can be vegetarian, vegan or meat based, and the two halves can have different fillings if catering to incompatible diners.

Nice vegetarian fillings include walnuts and blue cheese, multicoloured roast peppers and any strong cheese, cashews and mixed veg, sundried tomatoes and goat’s cheese, but really you can play with it and try whatever you like.

Nut roasts are yummy. Mushroom and chestnut pies. And (and I suspect these aren't very good for you but they're DELICIOUS) moving Mountains breakfast "sausage burgers". They're made of Oyster mushroom I think. They tastes like roast pork. They're in the freezer section in sainos.

Thanks SO MUCH @RoRosie for posting this- I made it last night. A few tweaks - roasted the cauli instead of boiling because I like it with a firm edge, didn’t have any basil or rosemary and so used some sage and flat leaf parsley. No sesame seeds either but found some old cashews back of the cupboard and bashed them with a rolling pin to line the baking paper. No tin either for baking and so used a deep dish lasagne dish. Bloody delicious!
