What's sumac please?
Mustard. I have mustard powder amd wholegrain. Which one ?
Thanks 😊

Either one is fine, depends on your taste!
LaChatte · 19/04/2021 21:54
By the way it keeps fine in the fridge for weeks (I make it in a jar). It can go solid in the fridge, but it's fine if you take it out 10 mins before needed.

You can make loads of different types of dressing if you follow the 2:1 ration of oil to acid (vinegar or lemon juice). Works with most oils and vinegars.
Whatwouldscullydo · 19/04/2021 21:58
2:1...
That's useful to know thanks. I do like balsamic dressings they just don't seem to taste that great in the shops any more. I'll look forward to trying my own

One last thing, if you're going to use a strong flavoured oil (walnut, sesame or even olive for example) you can go halves with something more neutral such as sunflower or rapeseed.

Yoghurt
Lennon juice or vinegar
Salt & Pepper
Fresh Dill
Goes well with cucumber or tuna pasta salad
-
Lemon juice
Olive oil
Oregano
Garlic
Onion (chopped)
Salt and pepper
lovely for a Greek style salad

Well I have an array of oils now arriving from amazon...so looks like I can play around now.
Thanks all

This past month I discovered apple cider vinegar. Nice and tangy. I made a Greek salad dressing today using it instead of balsamic or red wine vinegar. I tastes quite nice.

I quite often add a bit of maple syrup or honey to oil vinegar mustard salt and pepper. It lovely if you are doing a coleslaw as alternative to a mayonnaise dressing.
Look up Asian style dressings too, rice wine vinegar, fish sauce chilli, fresh coriander, lime p, fresh mint, pinch of sugar.
MaryIsA · 20/04/2021 07:48
Jamie Oliver website has good recipes too.

I never buy or pre mix dressing, just splash olive oil, balsamic vinegar, salt and pepper straight on and mix the salad...
Whatwouldscullydo · 20/04/2021 08:27
Those recipes look good too. Thank you
I'm.eagerly awaiting my delivery of oils and vinegars. I might have gone a bit over board

Sumac is dried berries usually from Iran. It has a lime/sharp taste and is great used in a fattoush salad with dried mint, lemon juice, olive oil and garlic.
Whatwouldscullydo · 20/04/2021 10:28
I'm.gonna have to Google fattoush salad now 😂
I just stocked up on some salad stuff looking forward to trying all this

Avocado and apple cider vinegar, leave and it sort melts, shake it and yummy creamy dressing! Can add chives or other herbs if you like them too.

Sumac is the bomb! It’s great with lamb or chicken or fish dishes too. Adds a zesty, sharp freshness. Lovely in salads, sprinkled on top of shakshuka (another healthy, super-easy recipe that is to die for!)

Hi can I ask what you are using the tahini for? I have a whole jar minus 3 tablespoons which I used to make hummus?
