Ah that explains it. I got my tahini from m& s and there is a recipe for dressing printed on the jar! I'll have a look later and post it on here👍.

Cut a shallot as small as possible (couple of mm) add Balsamic vinegar, so it cover all the Shallots mix well. Add olive oil (maybe same qty as vinaigar) mix well again. Serve straight away and keep well in fridge. The Shallots become sweet almost confit. Olive oil may solidify on top but after couple of minutes at room temperature will be liquid again.

My husband bought me one of those cuisineart little chopper/blender things for Christmas. At the time I threatened to jam his bits in it and have explained that kitchen appliances are NOT presents. I do use the bloody thing nearly every day, though. It is brilliant for whacking up fresh herbs and onions, etc (I cry like a herd of babies when I cut an onion, so it’s indispensable for this purpose alone!) and for quickly emulsifying a mayonnaise or vinaigrette, whipping up a hummus, etc. Despite my fury at the time, it’s become my most-used appliance. Pretty sure you can get cheaper ones that do the same thing - or a stick mixer with an attachment, too.
