Chow mein. Shred chicken, spring onions, carrot, any other suitable bits in your fridge. Stir fry with Chinese 5 spice and soy sauce, ginger, garlic, chilli if liked. Cook noodles. Mix together, splash of sesame oil.

Agree with risotto (you can use the carcass for stock) or an orzotto- basically a risotto but made with pearl barley instead of rice 😍

Chicken and leek pie with puff pastry top. Add mustard to the mix for extra tastiness.

Risotto - ideally with mushrooms, too, if you have them.

We cycle between fajitas, chicken pie, curry and stir-fry. And pasta - either with a creamy mushroom sauce (yogurt or creme fraiche, we never have cream in) or tomato sauce.

There's a sort of Spanish-inspired thing I do too with chorizo, peppers and loads of paprika that works well with leftover chicken as well as raw fillets, just fry chopped chorizo, add veg and garlic and paprika, splash of water and tom purée and chicken, then fry.

I love my chicken pesto pasta. Fry up some sliced peppers, add creme fraiche, pesto, crumbled chicken stock cube, add some peas and your leftover chicken and serve with pasta. YUM.

All fab suggestions. We had ceaser salad. Was very nice indeed! But will keep all the ideas in mind for next time!
