Any good recipes for leftover chicken? Not soup, bit warm for that. Same for curry. Thanks!

Yes. Pasta is a good call. Or maybe a noodle thing

I make a pie with mine, ready made pastry and i make a simple white wine sauce.

Risotto!

Fajitas, or risotto? Or cook off some fresh spring veg, add chicken, stock and then some creme fraiche, let it simmer until it's delicious. Serve with crusty bread for mopping

Mm yum ideas. I did google and saw like a nachos thing. I was going to do a lasagne but frankly can't be bothered 😂 it's been one of those days!

I love it as is but smothered in salad cream and served with bubble and squeak. In fact, that's what I am having for dinner tonight.

We usually do a stir fry, quick and easy.

I have successfully used this coating/sauce/spice mix on cooked chicken. Very tasty. Then I serve with lime & coriander rice, pico de Gallo, and refried beans. Not a fan of avocado, but that would work well too.

Slice fennel and two lemons, add some garlic, roast in the oven. Add the cooked chicken for the last 10 mins. Serve with any leftover roast potatoes or roast some diced veggies at the same time.

Slice up the chicken.
Put a pot of water on to boil. Add salt and spaghetti.
While the spaghetti cooks fry off a punnet of cherry or baby plum tomatoes, add a generous tablespoon of pesto, more oil to loosen and a bit of the pasta water. Add the chicken to warm through. Mix the pasta through and serve. You can add sliced onions or peppers at the beginning if you want but then you have to start the sauce before the pasta, which involves forethought!

Go retro and make coronation chicken! Serve as a topping on baked sweet potatoes with a green salad.

I always do versions of pilaf rice. Turned into a new favourite now 😁

We usually go for risotto or other rice dish like Cajun rice, chorizo rice etc. I'm also partial to a hot chicken and gravy roll!

I do a version of waldorf salad with shredded chicken, celery, walnuts, grapes, lemon juice and mayonnaise which is very nice with some bread and cheese; now wondering if I can justify going to the shops just for grapes as the sun has come out here!
