I had the same problem - oven roast it with garlic and olive oil - dead easy and it's v cheap

It was lovely - quite light like lemon sole. Not that filling though so serve with something to bulk it out

Tilapia is a very popular fish in Jamaica, it's nice, just steam it and have it with some steamed veg and rice or jerk it with bammy

Once saw someone put some red pesto in it wrap it in Parma Ham and bake it in tin foil, I don't like fish but it was tasty.
