What to have with salmon?

We eat salmon at least once if not twice a week. All I do is wrap it on foil with olive oil, salt and pepper then make mash potatoes and peas on the side. Sometimes I make fish cakes. But that's about it. Any suggestions to make salmon more exciting please.

We eat salmon at least once a week. Some varieties:

  • marinated in miso/ginger/mirin and cooked under the grill. Served with rice or soba noodles with a mangetout/sugar snap/broccoli salad
  • slowly baked with a maple/Mayo/mustard glaze, served with sweet potatoes
  • grilled with a soy/ginger/orange marmalade glaze. Served with rice and greens
  • cubed raw in poke bowls
  • pan fried with a mustard powder/sugar dredge served with beetroot and hasselback potatoes
  • grilled or steamed served with a watercress creme fraiche sauce, served with parsleyed boiled new potatoes
  • poached then served with a beurre blanc, buttered peas or green beans
  • tray baked with green beans, almond slivers, sliced potatoes with olive oil lemon drizzle

With Cajun spice rub
Or jerk spice rub
Or bbq marinade
Or soy and honey glaze
Or lime juice and Chilli flakes
Or covered in garlic and herb cream cheese

I put ours in foil with lemon juice squirted over it. Serve with baby boiled potatoes and asparagus tips.

Teriyaki Marinade or something like this www.bbcgoodfood.com/recipes/glazed-sesame-salmon . Hot oven for 8 minutes (15 is far too long) . Serve with sticky rice and garlicky pak choi/ other stir fried veg of choice.

Teaspoon of olive oil rubbed or painted into skin, then rubbed with a series of spices -ginger, cumin, coriander, turmeric. Any Indian spices, really, slice or squeezed time. Cook in foil.

Salmon tikka.
I cheat and use a paste usually.
It is lovely with rice and salad
