What to have with salmon?

We eat salmon at least once if not twice a week. All I do is wrap it on foil with olive oil, salt and pepper then make mash potatoes and peas on the side. Sometimes I make fish cakes. But that's about it. Any suggestions to make salmon more exciting please.

I made a salmon & pea pasta the other day. Was mega easy, took about 20 mins & was a hit with everyone. Recipe is easy to find online, I ended up adding my own touch to it too.

We have it...
thai style on top of stir fried veg and noodles (I just find random recipes online)
With veg and Parmesan new potatoes (boiled, bashed slightly to split them, on a baking tray, sprinkled liberally with grated Parmesan)
Wrapped in filo along with garlicky spinach and pesto (with chips or potatoes of some kind)
With cous cous that I mix up with roasted veg (I usually flavour the salmon with Cajun seasoning or something)

With tagliatelle + a tomato and herb sauce - having that tonight in fact!

Steamed with baby potatoes and veg

Steamed with rainbow rice (aldi)

When I have it with potatoes or rice I add nando's sauce, don't judge it's lovely Grin

Pan fry with sesame seeds, sliced red pepper, mange tout, sesame oil, add grated ginger, soy sauce tbsp sugar, and sake plus a little water. Top with chopped spring onions. Serve with rice or noodles

Cut into chunks, skewer, marinade in teriyaki and griddle. Served with brown egg fried rice and griddled bok Choi for me. My kids love this.

Or (ridiculously easy) thaw a bag of Mediterranean veg mix, mix with 200g couscous, a lemon (zest and juice) bit of olive oil and 260ml boiling water/stock. Lay salmon on top, cover with foil. Roast in oven approx 20-25 mins. Also good with trout

Cous cous. I fry off diced chorizo, diced peppers and halved cherry Tom's then stir them into cous cous, add some thai sweet chilli sauce. Pan fry the salmon and pop it on top.

I do exactly the same as you op except broccoli or kale instead of peas, and a sweet potato and potato mash. It's a winner time and time again so sometimes its good to stick to the simple meal you know goes down well.

Layer thinly sliced potatoes and onion in a baking dish. Add a layer of sliced tomatoes, bit of white wine (or stock), drizzle of olive oil, seasoning, herbs, garlic - cover with foil and bake for 30 mins. Add the fish, bake for 18 mins uncovered. I do this with any fish - works a treat.

I also like salmon poached, served with lemony risotto.

Salmon on a bed of lemon/Parmesan pasta (think it's a James Martin recipe)

Salmon and pea risotto (also with lemon and Parmesan)

Lazy option, cook salmon in foil parcel into oven with sweet chilli sauce and butter/oil), served with mash or rice and veg

My son does a recipe that involves various amounts of basting with butter, garlic and honey, then putting the pan in the oven. It's very nice.

In a tray bake with new potatoes, red onion, chorizo and peas.

Covered in harissa and served with roasted veg.

We cook the salmon with Philadelphia and bread crumbs on the top.
Roasted parsnips, carrots, peppers and red onion.
Corn on the cob.
Lots of sweet chilli sauce!

I'm having baked salmon tonight. With broccoli, leek & mushroom creamy sauce, over spiralised courgette.

If I'm feeling fancy, I'll do it with the zest and juice of half a lime per fillet, mixed with sesame oil and drizzled over and baked, leaving a bit to drizzle over when cooked.

Eaten with couscous and mango salsa (mango, pepper, spring onion, lime juice and coriander).

Very zingy.

We just had it with a potato salad - baby potatoes with creamy honey and mustard dressing, feta, sundried tomatoes, black olives, green beans and rocket. Mix the salad together when the potatoes are still hot. So tasty.

I love these from Sainsbury's, they go perfectly with Salmon. Started making them myself. Not hard just quinoa,brown lentils, edamame beans, kale with mint & lemon
