It’s too cold for sandwiches and I’m bored of beams on toast.
DP had nachos today and I would never have thought of those!

My current favourite is sourdough cheese on toast with a thin layer of red onion jam under the cheese.

Today was a wrap with spicy chicken tenders.

I eat a lot of beans and sausage on toast.

I am not very inspiring.

Leftovers! That’s what I have most days.

Tomorrow I’ve got beetroot bourgignon. Daal is favourite, also chilli, curry, pasta bake, sausage casserole, etc etc etc.

I’m also quite partial to a fish finger or sausage sarnie.

Quesadillas! Just get a couple of tortilla wraps, add cheese and other fillings, press together, dry fry and slice like a pizza 🤩

Similar to curlytops - a couple of tortilla wraps with tuna and cheese and pan fried on both sides. A tuna melt in wraps.

Ravioli on toast with grated cheese.

Quesidillas, toasties, baked spud (5 mins microwave, then 20 mins oven = perfect), soup, can of ravioli, leftovers that get pinged, sausages or burgers in rolls, black pudding in a roll, scrambled eggs, omelette, pasta with pesto. All quick and easy.

Noodles cooked with quarter of a stock cube, a little water and some ftrizen peas and sweetcorn, then stir in a little tomato ketchup or soy sauce when cooked.

Welsh rarebit. Pizza muffins - English muffins, split and toasted. Spread with tomato puree, add garlic Italian seasoning, shove on some cheese and olives, etc and grill till melty and delicious.

i like stuff on toast for lunch, or toasties

What about that foldy fad thing that's going about for tortillas, you lay fillings on three of the four quarters, make one cut from the edge to the middle where one of the fillings meets the naked bit and then fold it up and into a pan if you want it hot.

I was thinking about an egg one, with bacon and cheese, or maybe pizza ish with pesto, cheese, ham and mushrooms!

I think leftovers are good. In the summer I love salads but they leave me starving atm. So I make soups: 1) fry off chicken with soffrito add stock, shred chicken, 2) fry garlic, fry courgettes add red lentils add stock, blitz, 3) soften onions, add carrots add stock, blitz, 4) soften leeks in lots of butter, add potayo and stock, blitz and add crème fraiche
Or use leftovers:

  1. cold noodles in hot stock (I like kallo chicken/umami or miso) with frozen peas heated in microwave. Lee kum chee chiu chow chilli oil makes everything taste good eg plain cooked rice and silken tofu, leftover veg. I shred cold roasted chicken and heat cold pasta with pesto and mix them. I marinate cooked lamb (from roast) in mix of 4 parts soy sauce, 4 parts shaoxing/ginger wine, 1 part sesame oil and fry it with chopped ginger and spring onion chunks and serve on left over rice. Hot potato waffles: cold mashed potato (I have also defrosted frozen mash in microwave), mixed with grated cheese and chorizo bits (Waitrose) and chopped sprint onion if you like and put into your waffle maker. If it’s hot I feel fuller. I bulk out with frozen veg eg green beans, broad beans, spinach.

Crusty bread

Chicken or turkey breast slices
Emmental cheese
Mayo
Yellow mustard
Gherkins

Pile all ingredients onto the crusty bread. Slather top slice with melted butter & stick in the toastie machine / panini press thing.

You will thank me.

Most things on sourdough toast! Avocado and poached egg. Hummus and smoked paprika. Chopped cherry tomatoes.

Baked eggs with cream. Homemade leek and potato soup. Tacos with refried beans. Fried egg and homemade hash browns.

Leftovers are my fave I had Sunday roast leftovers yesterday. Will be having cottage pie leftovers on Thursday.

I like CoOp tinned 3 bean chilli soup. I have it with a bit of grated cheese and a toasted pitta.

Spinach, mushroom and cheese omelette.

Sardines in tomato sauce on toast.

Baked potatoes with tuna crunch (corn, peppers, cucumber).

"Posh" scrambled eggs - cook up whatever veg and meat you fancy, tip in beaten eggs, scramble, add cheese just before serving. Have with bread, toast, baguette or roll. It can be made into a non authentic shakshuka by adding a can of tomatoes before the eggs, cracking them in whole and popping a lid on. Endlessly variable - things I've added in the past (not all at once!) include bacon, ham, chorizo, tomatoes, spring onions, spinach, peppers, courgette, aubergine, mozzarella, cheddar, crème fraiche and chilli in dried, fresh and sauce form.

Fried rice is similarly quick to make and forgiving to use up any odds and ends - soy, sesame oil and sriracha add flavour, or you can head in the direction of Cajun seasoning.

If you're feeling fancy, chop veg (I like asparagus, courgette and cherry tomatoes), wrap in foil with a salmon fillet and bake. Boil mini potatoes while it cooks, then toss with the salmon juices and a squeeze of lemon.

Can't believe I forget leftover Sunday dinner.

On Mondays I fill a little over proof dish with left over dinner and some nice gravy and heat it in the oven for 20 minutes It's even better you have a Yorkshire pudding to add for a few minutes at the end.
