I love cooking, I love eating, and am an adventurous cook. I mix and match and am happy to replace an ingredient I dislike, but there are some things I think just don't need to be elaborated on and are just lovely as they are.

Coffee - I don't like my coffee to taste of anything other than coffee. I don't like all the syrups and flavourings that people put in it

Gin - just no to flavoured gin. Flavoured gin is for people who don't like gin Wink

Fruit crumble - the crumble mix just needs flour, sugar and butter and nothing else

Shortbread - again just flour, butter and sugar. The king of biscuits IMO

I don't mind chilli in chocolate but I'm mostly a fan of good quality palm oil free dark chocolate anyway. Almost impossible to get decent chocolate products these days.

Gin tastes like disinfectant to me can't stand it, sorry op but each to their own. I prefer whisky and rum myself, good full bodied red wine and light German lagers in the summer.

Nothing puts me off a recipe more than a list of poncy ingredients as long as your arm. I'm much the same. BBC good food site is actually pretty good for being able to quickly locate basic recipes for most things, they do have fancier recipes but super easy to find basic ones.

My particular bugbear is when you order a pudding in a restaurant and it comes dusted with icing sugar. So you've taken a pudding that you presumably worked hard to get tasting just right, sweet enough etc and then you just chuck another spoon of sugar over it to look pretty. Ruining whatever is underneath by making it far too sweet. WHY???

My DH would beg to differ. At our local Italian restaurant (we miss you Buon Appetito) he always orders the Pollo Marengo that usually comes with sauté potatoes to come with plain fettuccine instead.

I really don't like coffee or gin, so I'm not guilty there!
I do put a splash of cream in carbonara as I prefer it that way, though I acknowledge its not authentic, however I've seen worse.
Carbonara made with white sauce, or chicken or cheese sauceShock
One guy I knew who insisted everything had to be authentic used wine and shallots in it, though he was a wanker anyway!

Lasagne, bolognese and cottage pie shouldn't have loads of random vegetables and/or pulses in.

Chips should have salt on and nothing else. Vinegar and mushy peas allowed if your having fish with them.

Bacon sandwiches should be naked, no sauce.

Pancake day pancakes should have lemon and sugar or butter and sugar.
Not ice cream, Nutella, fruit, syrup etc although my kids love all that crap!
