Best chicken thigh fillet meals?

I have a 1 kg pack of thigh fillets that I stupidly didn’t separate before freezing so need to cook the lot. I always seem to casserole or fajita or curry them, what can I make that is a bit more interesting?

5 ingredient chicken: mix sweet sauce, tomato puree, sesame oil and spread over chicken thighs. Sprinkle with sesame seeds. Amazing.

This is very good, relatively quick and not difficult. You can ring the changes a bit depending on what you have in - raisins or currants instead of sultanas, or using almonds or hazelnuts instead of walnuts. I use a dash of mint sauce in the yoghourt as a simpler way of making the minted yoghourt and it works well. Also works with chicken breasts, of course, but I like chicken thighs. Leftovers are lovely cold.

I make them into chicken nuggets/Gordon's

If we are egg free I use stock and breadcrumbs, if egg is allowed i can use that and breadcrumbs

Season however you like

They are so much tastier than chicken breasts

Ohhh... this. Korean Chicken Shawarma. Lovely with egg fried rice and stir fried veg first day, leftovers with salad and garlic sauce for lunch.

I love chicken thighs in fried rice with lots of chilli, ginger, garlic and soy sauce (and sweet soy sauce/ketjap manis if you can get hold of it). Add some veg and spring onions and it’s lovely.

Curry flavour but not a curry - you can sub any frozen veg you like into it. And we often use fresh spinach rather than frozen which we just chuck in at the end. Lovely the next day too.

Mix garlic, lemon juice, tomato puree, chilli and a spice like sumac if you have it with natural yoghurt and marinate before grilling, slicing and having with pitta and salad like a takeaway kebab
