Best chicken thigh fillet meals?

I have a 1 kg pack of thigh fillets that I stupidly didn’t separate before freezing so need to cook the lot. I always seem to casserole or fajita or curry them, what can I make that is a bit more interesting?

We made the one in this months good food magazine which was very yummy and will be made again.
Was that the chicken Arrabitta with Parmesan dumplings that was amazing and a new family favourite.

How much do you need to feed your household? How many meals would your normally get out of 1kg of chicken thighs? If it's more than 2, I would make something that freezes well. I would possibly make one new recipe for tonight, then a casserole or curry for tomorrow and to freeze. It's safe to refreeze them after cooking (just in case you didn't know).

My favourite isn't that exciting but it's a classic, Nigel Slater's coq au vin:

Carton of passata
Chopped onion
Couple of cloves of crushed garlic
Handful of dried apricot pieces
Can of chickpeas
2teasp harissa spices
1 TSP chilli flakes
1 teasp cumin powder
1 teasp coriander powder

All goes in the slow cooker

Serve with lemon cous cous, and sprinkle with flaked almonds and fresh coriander before serving.

Tandoori chicken. There are lots of recipes for it online. I buy a load of thigh fillets, tandoorify them and have with a veg curry or just with naan and salad. If there are any leftover they are great sliced into wraps for lunch.

I made this the other night with boneless, skinless chicken thighs - skipped the browning part, cooked the shallots in butter first then nestled the seasoned thighs in. It was really good, and easy.

Take the bone out
Mix some sausage meat with packet mix herb stuffing.
Stuff the thighs and oven cook

We like a shawarma or souvlaki

Marinade chicken in herbs lemon olive oil (and yoghurt for souvlaki) then grill

Make a garlicky yoghurt sauce (or cheat and buy some tzatziki)

Make some flatbreads (or cheat and use wraps )

Cut up some red onion tomatoes cucumber lettuce

Build a delicious wrap

Another good way is halved new potatoes and a few whole garlic cloves plus olive oil and seasoning in with the chicken thighs, I also often add thick sticks of carrots and parsnips. Roast for about an hour of boned or 40 mins if not, turning.

Then toss in whatever else you fancy. I've tossed in feta or cooked green beans and broccoli before. Then drizzle with lemon juice and tzatziki.

I slather mine in chermoula and chopped coriander/garlic, a bit of salt, and bake them in my cast iron casserole dish. Later, I add a strained tin of chickpeas and stir it around, bake a bit more, serve on a bed of rice with some steamed broccoli or greens of your choice. A nice squeeze of lemon adds a decent bite.

Ugh I forgot the zataar which is the key ingredient in the second recipe with the potatoes etc !!!!
