Cabbages

We get a vegetable box and get a big cabbage every single week... We're a family of four, including one preschooler and one baby, and nobody is a massive cabbage fan. So we struggle to eat one a week.

Normally I do a cabbage cheese bake (like cauliflower cheese) or cabbage stir-fry or fried in butter and cumin seeds. But there's still always so much more cabbage than we can or want to eat. Three untouched whole ones sitting here right now.

Anyone got any good cabbage recipes or ideas?

Coleslaw is really easy to make and so much nicer than shop bought.

Colcannon.

Cabbage is great in curries. Just slice it up and chuck it in near the end.
It’s also really nice stir fried in sesame oil with soy, ginger and garlic

It’s lovely spiced with potatoes. You can use any cabbage in this recipe.

Cabbage paratha

Or i like it spicy with Thai flavors.

Also yummy is cabbage with fish sauce. Total comfort food. Quick and easy

Samin nosrat also has variations on coleslaw which are yum.

Slice up finely in a stir fry
Asian slaw style peanut salad
With an sort of sausage/chicken/whatever dinner that also has veg + gravy

Love the idea of cabbage cheese like cauli cheese.

I eat it as coleslaw most days as it goes with salad, sandwich etc for lunch

Salt, olive oil, knob of butter on top, roasted until brown, I could eat a whole one.

Pasta with caramelized cabbage, anchovies and breadcrumbs: saute garlic, anchovies, bread crumbs and sage in butter until bread is golden brown, caramelise cabbage with olive oil and chili flakes, boil and drain a pot of pasta, mix together, add parmesan, salt and black pepper.

Cabbage and onion marmalade: salt onions and cabbage and saute in olive oil for an hour until soft and golden, add garlic, thyme, capers, and salt and pepper, cook another 15mins.

Blanch the leaves then stuff with spicy mince and wrap into parcels, place into an oven proof dish, cover in a tomato pasta sauce, top with cheese and bake for 40mins

Oh and bubble and squeak!

My children love a Jamie Oliver pasta dish with pancetta and Savoy cabbage.

ODFOx · 14/11/2020 09:32

I do stuffed cabbage leaves filled with spiced mince and rice.
Or Farikal, the Norwegian lamb dish: we ate a whole cabbage and a quarter between 4 of us in farikal this week.
There are loads of variations on a coleslaw if you don't like mayo: I do one with lemon juice and nut oil which has cabbage, spring onion, grated carrot, chopped walnuts and raisins in which the DC will eat out of a bowl! No cooking required.

Cabbage sausage bake is an old favourite, much nicer than it sounds

If it's a green cabbage my lot love stuffed cabbage leaves. Stuff them with a mince and rice mixture and cook in a tomato sauce. There will be recipes online. It's amazing.

InDubiousBattle · 14/11/2020 11:00

My mother used to make wonderful stuffed cabbage leaves. Fry onions, (lots of)garlic, beef mince and mushrooms in some oil, mix in a stock cube. Blanch the biggest cabbage leaves then stuff with the mixture making cabbage parcels. They're then baked in a garlicky tomato sauce.

For savoy cabbage I love it in pasta. Fry garlic, onion, smoked streaky bacon and chorizo together then stir in cooked and loosely drained fusilli and savoy cabbage (just put finely shredded cabbage in with the pasta for the last two minutes ). Grate in a load of parmesan. This is really nice but you will put on a stone!

Thank you so much everyone! Going to work my way through all these ideas with our weekly cabbage... Will start with the no mayonnaise coleslaw and sausage bake I think!

Got a backlog of three cabbages to start with, so grateful for all the cabbage ideas

Is it a dark green cabbage? One of my absolute favourite accompaniments with a meal is steamed & buttered dark green cabbage (or spring greens!)
Not entirely sure I'd have much use for one of them light green/white ones.

ouchmyfeet · 14/11/2020 19:48

If you like coleslaw Nigella's New Orleans coleslaw is amazing

Bacon and cabbage pasta from Miguel Barclay's one pound meals. Cook pasta, fry some lardons and crushed garlic, add some chopped cabbage with plenty of olive oil and voilà.

MirandaMarple · 14/11/2020 21:31

Creamed cabbage. Made with a roux, nutmeg and topped with parmesan. A whole cabbage makes a very large portion, I tend to use savoy cabbage.

Pomegranatemolasses · 14/11/2020 21:35

This recipe is absolutely addictive:

Cabbage Foogath

1 medium onion, sliced
2 cloves garlic, crushed
vegetable oil
1 cabbage (white, red or green), shredded
2 red or green fresh chillies, chopped
1 block creamed coconut, grated or chopped up
salt

  1. Fry the onion and garlic in oil until golden
  2. Add the cabbage, chillies and coconut and stir-fry until tender.
  3. Salt to taste and serve as soon as possible
CorianderLord · 14/11/2020 22:23

Cabbage is lush.

Sauté in a pan with salt, garlic, mustard and pepper

So much cabbage love! Thank you everyone, these are giving me so many new things to try and generating excitement instead of dread of the weekly one!
