I got some minced beef out of the freezer and I really don't fancy bolognese or chilli as I've had them both in the last week

Not sure I fancy cottage pie but that is top option at the moment.

I have made a nice ginger stir fry recipe with minced beef but it's not my favourite.

For me and DH

Any ideas welcome - ideally quick and easy Grin

My recipe:

Sauce first.

  • cup of milk, olive oil in a large pan. Add oregano, salt/pepper, carton of passata, a massive squirt of tomato purée and a cup of water.
  • then I blitz an onion and celery in the blender and add. The sauce will be quite thin but will reduce on cooking. Get that to a simmer point and do meatballs.
  • slice of white bread in cubes. Soak in milk until a mush. Salt/pepper/oregano. One egg. A good handful of grated Parmesan. Meat. Use your hands to combine and shape into meatballs of what size you fancy (tonight I'm making "big balls" that have mozzarella inside but you can do small ones).
  • add to the sauce and simmer for ideally 2 hours for "big balls" or an hour for "golf balls".

Cook it with a dried pack of minestrone soup mix and serve with Worcester sauce and mash, and it’s mince and tatties!

This was a big hit with the whole family when I was having the same dilemma. I didn't have sugar snap peas so I improvised with thinly sliced carrots and frozen peas.

@Raera we have about 5 Sainsbury's cookbooks from that era (Mexican/Thai/Vegetarian)! The mince one had an upgrade a few years ago (original on the left).

They were great little budget books at a time when books were really expensive.

Thank you so much. I will look into all of these.

I finished work after 7 so went for a quick Gousto recipe - sticky beef ginger noodles. It's supposed to take 10 minutes but it took me slightly longer and I marinated the mince in fresh ginger, a little bit of garlic and soy sauce.

I will post the recipe if anyone is interested.

Meatballs are so easy. Mince, breadcrumbs, seasoning and I mix in a veggie burger mix to take the red meat content down a bit. Bake in oven in a bolognese sauce.
