Favourite veggie meals?

As a family we have decided to go meat free a few times a week. I make a good veg chilli and roasted veg lasagne but I'm after some more tried and tested recipes! I'm not keen on fake meat so just recipes where the veg is the star of the show. Any ideas?

Aubergine parmigiana is my favourite (using veggie parmesan, of course). Also tarka dhal, mushroom and white wine risotto, egg fried rice with peppers, beansprouts, carrots, mushrooms etc. I'm not a vegetarian, but I enjoy some meat-free meals - I used to hate macaroni cheese until I made it myself, but that's a new pleasure (with truffle oil and mushrooms - yes, I like mushrooms a lot!).

Made tamarind glazed aubergines and chick pea and feta salad last night. From Falastin cookbook. Very delicious.

The Roasting Tin cookbook is good. There's a veggie one. Very easy.

Mushroom stroganoff (mushrooms, onions, stock water, coconut milk or cream, paprika)

Cauliflower, chickpea, carrot, new potato & spinach curry (made some curry paste, fresh ginger, coconut milk & stock water)

Veggie sausage casserole (this isn't so much a recipe but more chuck leftovers in... peppers, tomatoes, mushrooms, or whatever you have in... tinned toms, whatever beans you have in the cupboard inc baked beans, and season it as you wish)

@lovablequalities that's looks delicious. We aren't veggie but eat vegetarian meals about half the week. Off to look at that book on Amazon 😊

Meets Sodhal cookbooks are great I've got East and Fresh India. I love her paneer, cauliflower and tomato curry in her East book and pumpkin curry.

Dhal with bhel and chapattis

Black bean soup with nachos

Pasta pesto with roasted vege

Mushroom and Stilton pies/quiche

Easy courgette pasta

Paneer curry

I made a lovely salad the other day, served with a jacket potato: quinoa/red pepper/spring onions/beetroot/rocket/feta/lemon juice/pumpkin and sunflower seeds

Baked feta (make a foil boat for each portion, put half a wedge of feta and add sliced red onions, olive oil, chopped chilli, seasoning and a squeeze of lemon) serve with lentils (easiest with a cooked sachet) and crusty bread.

Roasted indian veggies (mix of anything you have - cauli, potatoes, onions, sweet pots, beetroot, parsnips, carrots) I throw some paneer or halloumi in too -www.waitrose.com/home/recipes/recipe_directory/r/roast-indian-spicedvegetableswithlimecorianderbutter.html

There are so many. Last night we had a mushroom and lentil loaf with a ratatouille. It was delish.

Currently obsessed with porcini pasta bake. The original recipe has pancetta in it, which I leave out.

We like various forms of fritters such as these. Where recipes call for flour to bind the ingredients, I use gram flour as I think it works better. A dipping sauce such as chilli and/or yogurt work well as an accompaniment courgette fritters, aubergine polpette,lentil fritters.

Our current favourite are:

Roasted cauliflower and pilaf

Pea or butternut risotto

Roasted tomatoes with spaghetti, burrata and avocado

Butternut curry or chickpea curry (although DS doesn't like the chickpea one - might be a texture issue for kids?).

We're starting to relook at soup as weather is changing. Corn chowder is our favourite but I'm a big fan of butternut soup and have a lot of different recipes for it. Will soon be reintroducing spinach and pea soup.

Stuffed mushrooms - but don't do these too often as find them a bit too much like hard work. Sometimes do stuffed peppers / squashes too but again, I find them a bit daffy so not too often.

One tip - frying the corn for the topping takes a while! They don't specify that in the recipe so the first time, I did it right at the end and we all had to sit around for way too long after the soup was ready!

One I have been doing for years is spinach and feta pie. I mix diced red pepper with feta cheese and a tub of ricotta, chopped spring onions or red onion, grated nutmeg or chopped mint . Cook and drain frozen spinach or use fresh spinach. Mix filling together with seasoning. Butter sheets of filo pastry or use olive oil, fill with the filling and bake at about 170 for 45 mins or so or until cooked through. Scatter flaked almonds between the top sheets or add some walnuts to the mixture.

This is excellent - tastes and looks fabulous, looks like it took ages, but doesn't really, and not too difficult. If you have any leftovers, it tastes wonderful cold the next day too.
