I do a loose meal plan for our teas over the week. I feel like I'm always making the same things so hoping I can get some inspiration here.

I'm not after crazy fancy food, I do love cooking but just looking for simple-ish weeknight meals.

To start off, this week we're having:

Monday: Tomato and mozzarella gnocchi with veg

Tuesday: sweet chilli chicken thighs, halloumi, crispy sliced potatoes and salad

Wednesday: Beef lasagne, garlic bread & salad

Thursday: vegetable & chickpea curry w/ brown rice

Friday: pesto pasta, shredded chicken and cherry tomatoes

Sat: Sundried tomato and spinach pizza, garlic bread and salad.
Sun: BBQ - not sure what yet, will see what looks good at the Farm Shop.
Mon: Chicken satay, rice, raita, salad and naan breads
Tues: Honey ginger salmon, noodles, stir fry veg.
Weds: Full English
Thurs: Roast chicken and all the trimmings or if it’s too warm, chicken pesto pasta and salad

I've just put together our meal plan :) meat and veggie option every day as we are 2 veggies and 2 meat eaters.

Sun - sausages and mash and veg or quorn roast

Mon - tikka spiced chicken drumsticks with salad and spicy rice or leftover quorn roast in a curry sauce with the same salad and spicy rice

Tue - puff pastry tomato and vegetable tarts (build your own kinda thing which the kids like to do) with garlic and herb butternut squash wedges

Wed - spaghetti Bolognese with a meat sauce and a quorn mince sauce with lentils

Thu - lemon and coriander chickpeas with brown rice and salad or lemon and coriander chicken

Fri - Linda McCartney chorizo style sausage in homemade flatbreads with red cabbage and apple slaw or pork sausages with the same stuff

Sunday - spag bol, garlic bread and salad

That’s as far as I’ve got. We eat with the kids (4 & 2) at the weekend, but in the week they have tea at nursery so we can be a bit more adventurous, and all they want in the evenings is toast, sandwiches or cereal.

It’s a loose meal plan and might change after I’ve been to the supermarket this afternoon -

Today: Spinach & ricotta cannelloni, salad, garlic bread
Sun: Teriyaki salmon & veg tray bake with rice
Mon: Quiche with various salads
Tues: Halloumi & veg burritos, Mexican bean salad
We’d: Lentil lasagna, salad, probably garlic bread again!
Thur: a Brazilian fish stew type thing with rice
Fri: Selection of vegetarian curries (already in the freezer) and (bought) sides

Some of ours for the week are jackfruit pizza, spinach and artichoke lasagna, seitan taquitos, coconut dahl and roti, seitan alfredo pasta, and Thai no fishcakes. We are vegan and I make up a batch of seitan for the week each weekend (which is also used in sandwiches some lunchtimes).

I do my big shop on Tuesday so this is my weeks meal plan
Enchiladas and salad
Tinned sardines, jackets with feta salad
Spaghetti and meatballs with salad
Chicken and bacon lattice (Asda freezer section) with sautéed potatoes, broccoli, carrots and peas
Tuna, sweet corn and pea pesto pasta
Freezer gravel with veg
Chicken thighs in tikka pasta and yoghurt, salad and sweet potato wedges.

Egg Paratha (using frozen paratha) with chillies, coriander and a tomato salad.
Baked Conchiglioni with a creamy green sauce, peas, bacon and rocket.
Slow cooked pulled pork in herb gravy, baked potatoes, crispy kale and broccoli.
Chicken ham and leek pie (dense packed cold sliced pie) green salad, asparagus, olives.
Roast chicken, spiced roasted cauliflower, new potatoes, carrots and green beans, probably gravy.
Minted lamb kebabs, cucumber dip, bulgar wheat with chopped tomato, loads of herbs and charred/roasted red pepper.

Stuffed peppers last night filled with spiced rice/lentils - which was actually quite nice.

Last night I made a chickpea curry (a made up recipe which includes fresh tomatoes, yoghurt and toasted coconut) with bhel.
Today is picky good - hoummus, gets-stuffed peppers egg
Sunday = veggie lasagne
Monday - away
Tuesday - possibly leek and potato pie, or maybe jacket potato and salad
Then in no particular order:
Quiche
Veggie chilli
Veggie chorizo casserole
Some sort of pasta
Something and chips

Haven't decided yet but for the first time since lockdown I will be on my own every evening and I cant wait Grin. DH has a week away with work and DS has a pub job and working every evening.

I am so sick of planning evening meals .......... pre lockdown DS was at Uni and DH works away a lot, four nights alone just eating what I like will be bliss.

Tomorrow: homemade fishcakes with tonnes of veg

Onwards:

Chicken noodle ramen
Turkey chilli tacos and veg
Spaghetti bolognese
Tuna steak and multi veg mash and side veg
Sweet + sour pork balls with egg fried brown rice

Then I run out of shopping/inspiration...!
