I do a loose meal plan for our teas over the week. I feel like I'm always making the same things so hoping I can get some inspiration here.

I'm not after crazy fancy food, I do love cooking but just looking for simple-ish weeknight meals.

Meant to be having teriyaki aubergine stirfry tonight but I’m so hot I’m not sure I can face cooking it
Tabouleh with flatbreads and hummus tomorrow
Monday: sausage with olive oil mash and onion gravy
Tuesday: gnocchi with sundried tomato and basil pesto (homemade)
Wednesday: sweet potato and green bean stir lankan curry
Thursday: leftover curry

We've been making more of an effort to cook lately. On this week's plan:

Chicken & lemon tagine
Bacon, egg & potatoes pan-fry
Chicken & mushroom empanada (bought) & big dressed salad
Chorizo and tomato pasta
Pork strips with cauliflower cheese
Paella with chicken, peppers, onion & saffron
Lazy day - pizza

@NotJustACigar how do you make your seitan? I tried a bacon made from seitan and really didnt like it but was thinking about trying it again if I made my own?

I don't like bacon seitan either, @cricketmum84. I make two kinds -"chicken" and "beef" and alternate each week. For the chicken you either need a food processor or mixer or you leave the dough to rest overnight and I use the Avocados and Ales chickwheat shreds recipe avocadosandales.com/2017/12/17/chickwheat-shreds/ For the beef I make this recipe but double it and don't do the marinade or sauce. lovingitvegan.com/vegan-steak/ I cook my seitan in an instant pot and then for the beef roast it for 20 minutes to brown, but there are lots of ways to cook it. For the stock I use massell's "beef" and "chicken" cubes - they are vegan.

Tofu pad thai
Buddha bowl with crispy tofu
Something from the freezer
Falafel hummus and salad
Sea bass with Greek salad

DH is vegan so we mostly eat vegan dinners. I plan/shop on Fridays,so:
Friday fish cakes, new potatoes and peas (only for me, DC were out and DH ate later when I was at work)
Saturday burgers, salad and chips
Sunday tomato and onion tart, new potatoes, veg
Monday stir fry veg and tofu
Tuesday houmous and pea fritters
Wednesday Dahl
Thursday pasta in a tomato and olive sauce

Tuesday - salmon, broccoli,
Asparagus and French beans with some chorizo

Wednesday - chicken stir fry with one of those pre prepared veg packs

Thursday - salmon stir fry with one of those pre prepared veg packs

Friday - Gordon Ramsay Turkey tikka masala with broccoli and French beans

Saturday - turkey meatballs with broccoli rice and roasted plum tomato sauce

Sunday - maybe a roast. Maybe a Thai green curry

Fri - no idea - might end up being takeaway

Shit mix rice - essentially egg fried rice with some prawns I got on a yellow sticker that I’ve put in the freezer.
Pasta with chicken in a sauce made of creme fraiche, leeks, lots of garlic and lemon.
Ham hocks with veg and potatoes
Freezer gravel

You all have such tasty meals!
I hope this week on dinner I will eat less than on the previous one!
In a rush, I didn’t have enough time during the day to have good breakfast and lunch, so I was starving on dinner time.
This week I try to plan my dishes and to eat equally. I’ve also bought a new espresso-machine, it’s so time-consuming! I have more time on breakfast. While my machine is making coffee for me, I'm cooking boiled eggs with vegetable salad.
What are your tips to make your breakfast faster? (don’t advise “wake up earlier”, I’m not an early birdSmile)

Meal plan all done for another week! As usual meat and veggie options and the meat eaters can choose which one they fancy.

Sat - pizza great night, tear and share homemade rosemary and garlic focaccia and DD (11) amazing potato wedges

Sun - chicken casserole or veggie sausage and butter bean casserole with mash, fine green beans, kale and broccoli

Mon - spicy chicken thighs or quorn fillet with spicy Patatas bravas made with whole baby potatoes from the Miguel Barclay book, big sharing salad.

Tue - spaghetti with either tomato and bacon sauce or courgette, pea and spinach in plant based cream sauce

Wed - chicken or quorn chicken tacos, refried black beans and avocado

Thurs - sweet and sour chicken or mixed veg with low fat fried rice or noodles and bean sprouts

Fri - pulled pork or pulled jackfruit burgers

All sounds gorgeous, I'm really interested in the pork ramen!?

This week we've had / are having:

Saturday: Gnocchi, with tomato and mozzarella, garlic bread and a big salad

Sunday: shepherds pie

Monday: slow cooker chicken, chickpea and veg curry w/brown rice

Tuesday: Fish, chips and either beans or mushy peas

Weds: Charlie Bigham lasagne, garlic bread and a big salad

Thurs: Chicken Caesar salad w/croutons

Friday: Macaroni cheese with crispy bacon, broccoli and cauliflower

A lot more pasta than we'd usually have! Can tell I'm due onWink

Wow I’m so impressed with some of these meal plans! Makes me realise how boring our dinners are which is mainly because DP is very fussy and only likes what I call pub dinners.

I’m thinking of trying two nights a week where he fends for himself so I can have something interesting and tasty!

This weeks teas, pretty dull this week mind you.
Sausage, veg, new potatoes.
Tuna jackets and salad.
Chinese chicken thighs, rice, stir fry veggies.
Egg fried rice with leftovers from the night before.
Beef mince tacos. Potentially. We’re going for a day out this day so might be late home, in that case it’ll be beans on toast with an egg on top.
Pea and chicken pesto pasta and salad.
Fish finger sarnies.

Last night was chicken, mushroom and spinach curry with rice.
Stuffed peppers
Sausages with dauphinoise and greens.
Steak pie with greens
Shatshuka with bread
Pasta with some kind of dressing/ sauce made with roasted tomatoes as we have a glut.
Chopped mixed salad

I'll mix up the order to make sure the fresh stuff doesn't get wasted.
