Amazing lockdown food discoveries

I made this www.bbc.co.uk/food/recipes/dal_makhani_30779 the other day as the fridge was empty and the food shop isn’t coming until 12 may - OMG it was so amazing.

I couldn’t stop thinking about it ( food obsessive) so DDs and I had it for dinner tonight done in the slow cooker with brown lentils and black beans and it was even nicer. No rice so we had it on chips with grated picked onions and mango chutney - soo delicious.

Anyone else found a legendary lockdown meal?

I have a round pyrex lab basin/bowl about 19 cm or 7.5 inches in diameter that she makes them in. It's a little wider than the pan in the recipe. My loose bottom pan was lost when we moved a few years ago and I never replaced it, sadly. The recipe calls for a loose bottom pan, but if you don't have one then use a pan with the straightest sides available to you. DD uses waxed paper on the bottom of my pyrex and butters the bottom and a few inches up the sides. She leaves it in for the 50 minutes the recipe calls for.

We don't have a 3 inch trivet - DD just uses the one that comes with the Instant Pot. The brownies are definitely on the 'scrumptious wodge of fudge' side. It's possible they would be more cakey if the pan was higher off the boiling water, but we are not complaining Smile. DD wants to get a tub of ice cream next time she bakes...

After removing from the pot, DD runs a knife around the edge, cools the brownies a little in the pyrex and lets them sink a little, then flips the whole thing upside down over our serving plate and taps gently. After a while you can see the wax paper beginning to separate from the bottom of the pan and down it plops.

I made this over the weekend www.bbcgoodfood.com/recipes/sauteed-chorizo-red-wine had it with crusty bread, olives, cheese, and (fake) potatas bravas made out of jacket potato’s cooked and cut into wedges, then fried and an easy arrabiatta style sauce on the side -It was amazing

No-knead bread has been my lockdown revelation! I never thought it would work but it is absolutely amazing for about 5 minutes' effort and much nicer than all my kneaded versions. Also works in a loaf tin rather than dutch oven, if a bit less crusty. cooking.nytimes.com/recipes/11376-no-knead-bread
