Amazing lockdown food discoveries

I made this www.bbc.co.uk/food/recipes/dal_makhani_30779 the other day as the fridge was empty and the food shop isn’t coming until 12 may - OMG it was so amazing.

I couldn’t stop thinking about it ( food obsessive) so DDs and I had it for dinner tonight done in the slow cooker with brown lentils and black beans and it was even nicer. No rice so we had it on chips with grated picked onions and mango chutney - soo delicious.

Anyone else found a legendary lockdown meal?

Ellenthegenerous - I went to Morrison's today and they were selling bread flour out of the bakery.

Ellenthegenerous · 08/05/2020 21:56

Brilliant, thanks Hippee, I will try there tomorrow

These are great

Oh I like the sound of the Jamie Oliver flatbreads. We've made Egyptian bread as part of a school project and it gets eaten as fast as I can make it.

Will try those for breakfast.

Also... dandelion honey. I shit you not. It's incredible!

I had got into the habit of buying microwave rice as it's much quicker to do when the kids get home. I'd forgotten how to cook rice myself after having done it for years. Mistakenly bought 3 huge bags of rice before lock down and due to not being able to get much shopping had to cook it from scratch. I'm embarrassed at the money I was spending on something so easy to cook!

sorryiasked · 09/05/2020 08:22

We generally cook from scratch anyway but have got into the habit of meal planning - it makes such a difference not just to using ingredients up but also to the nightly "what shall we have for dinner tomorrow" which I used to dread.

Best new recipe is no knead bread has to prove for 2 hours but so simple to make and results in three small crusty loaves.

Nearlyoldenoughtowearpurple · 09/05/2020 09:53

Sorryiasked if you like that bread, try the artisan in five
You can just keep dough in fridge and makes great bread so even easier

Another vote for Jamie Oliver's flatbreads! So so simple. And delicious the next day too - just pop in the toaster yum yum.

coffeeagogo · 09/05/2020 18:48

Ooh @PurpleDaisies am going to try that as the Dahl obsession is real

We made this tonight - was lovely. Had it with grilled chicken thighs on the bbq and feta salad foodnetwork.co.uk/recipes/german-potato-salad/?utm_source=foodnetwork.com&utm_medium=domestic

This was a winner in our house

Tartiflette

Fantastic thread, I will be taking notes tomorrow!

That yoghurt and SR flour thing works for lots of different bases. We do it as pizza scrolls for lunch boxes or as a pizza base.

My discoveries are mainly bread based. Jack Monroe's 38p soda bread. Fresh yeast instead of freeze dried sachets turns home made bread or pizza into utter luxury. "Normal" oranges - hadn't bought them for years.

The downside - I've finally got bored of avocados.

GrumpyHoonMain · 10/05/2020 00:04

Pizza base with atta and baking powder instead of yeast. It was a revelation

@coffeeagogo I just made this dal in my slow cooker, was very excited to try it but it turned out bitter!! I've been trying to make dal on the slow cooker for months and there's always a bitter taste. I think it must actually be the slow cooker itself rather than the ingredients. I've tried frying onions and spices first, adding sugar, all sorts. I think I'm going to have to accept that I need to make it in a pan. Shame as I love the convenience of the SC. Perhaps it's the tomatoes 🤔

noraclavicle · 16/05/2020 18:48

ChippyMinton we have a ton of gram flour too. I have been meaning to make Besan Chilla - it sounds absolutely delicious!

Lovelydovey · 16/05/2020 18:59

Leek and bacon flamiche - the DC go nuts for it!

Also chargrilling of practically any vegetables, and homemade ratatouille!

midlifecrash · 16/05/2020 22:31

Emergency Pie, to use up about 8tbs leftover cheese sauce which i found in the back of the freezer compartment, some celery and parsley. Slice onions, finely chop celery and carrot, cook in butter on a low heat. Blanch sliced potatoes in boiling water, about 5 minutes, drain well. Add potatoes and finely chopped parsley to pan. Meanwhile make shortcrust, reheat the cheese sauce. Mix sauce with the vegetables, use as pie filling. thought it would be meh, but it was great and I'd do it again.

I made this tonight but with puff pastry. It was really nice!

Fluffy eggs!

Fluffy eggs recipe! I’d never heard of them before lockdown but they are amazing!

DateLoaf · 20/05/2020 19:59

Thx for the recipe Gonnagle- I kneaded it for a while and stretched the dough thin, and hot and with garlic butter on top it was unbelievably delicious.

chocolatespiders · 20/05/2020 20:01

Coffee I bought all the ingredients to make that after seeing Jack Monroe cook it. Looking forward to trying it now!

coffeeagogo · 26/05/2020 13:40

@floppybit so sorry it didn’t turn out well for you. I have no idea what went wrong it has always been delicious and creamy for me. I just use the cheap Tesco tinned tomatoes - perhaps it is your slow cooker - I made mine the first time on the job and it came out really well too.

Another new food obsession for me - courgettes sliced longways quite thinly, rubbed with a tea spoon of olive oil and a sprinkle of granulated salt and then cooked on the bbq - so delicious

A real minor one, but purple grapes tossed in to a salad is just incredible. New obsession!

mathanxiety · 27/05/2020 06:58

Not only on lockdown but my oven is malfunctioning.

So DD decided to try brownies in the Instant Pot.

We live on Instant Pot brownies now.
