Best ways to use up carrots?

Buggered up on last week's order and ended up with an abundance of carrots.

Aside from soup, what can I make with lots of carrots? Ideally something for lunch. I have most of the 'usual' stuff such as dried herbs & spices, some flour, and so on?

Roast them and turn into a salad? Nice with Puy lentils and feta, if you happen to have any.

Carrot fritters - maybe Nigel Slater would have a recipe: sounds like his sort of thing.

Carrot Cookies!!!!!
(makes 12)
1 tablespoon margarine
2 tablespoons of sugar
1 teaspoon of vanilla essence
6 tablespoons of self-raising flour (plain flour add 1/2 teaspoon of baking powder)
4 tablespoon of grated raw carrot
1 tablespoon of water
Method
Cream the fat and the sugar together with the vanilla essence
Mix in the grated carrot
Fold in the flour adding water as it gets dry
Drop spoonfuls onto greased tray and press down a little
Pre-heat oven to 200C
Sprinkle tops of cookies with extra sugar
Place in oven for 10- 15 minutes

Chop into bite size pieces, Drizzle with honey and roast then add to a salad with grains.

Use instead of eg. sweet potato or butternut squash in practically any recipe calling for either of those vegetables.

  • carrot and cardamom cake (can be frozen too)
  • Thai carrot salad

Parboil them, put them on a baking tray, scatter dried thyme or fennel seeds over them and then open-freeze. Put them in a freezer bag and whenever you want roasted carrots with dinner, just pop some in a hot oven for 30 minutes with whatever else you are cooking at the time.

Make a risotto/ pasta/ rice dish by oven roasting the carrots in oil with salt and pepper. Blend 2/3 with stock and garlic powder (or roasted garlic). Cook pasta/ rice in the liquid until cooked, with dried basil (ordinarily would add fresh at the end), adding more water in small amounts to stop it drying out. Stir through goats cheese at the end (or Philadelphia, or creme fraiche, or cream) and the rest of the roasted carrot. Grate Parmesan (or other hard cheese) on top to serve.

Carrots on a stick was a thing during rationing. Not sure what the stick added.

Alternatively carrot and pineapple muffins are an option.
