I seemed to have accumulated a mountain of tinned tuna that I have seen on offer over the months. I recon I have about 20 tins!

I make a quiche. Put a tin of drained tuna in a pastry case with some tinned sweetcorn. Pour over a mix of eggs/milk and sprinkle on some grated cheese. Bake for about 25 minutes. It's the only type of quiche my kids will eat.

Sauté onion and garlic, throw in some mascapone and a bit of tin toms, stir in tuna serve over rice or pasta or some grain.
Delish.
It was a omg I have nothing in except half a tin of this and a handful of that dinners that I've made multiple times now for myself and the little ones! 😂

Japanese tuna mayo onigiri (rice balls) with nori (dried seaweed) is a delicious lunch instead of a sandwich. My kids love it.

Gregg Wallace made these on an EWFL show. They're pretty tasty!

Ingredients4 x 160g tins tuna in water, drained and flaked

100g/3½oz freshbreadcrumbs

2 free-rangeeggs

4 tbspmayonnaise

4spring onions, finely chopped

1 smallgarlicclove, finely chopped

2 tspvegetable oil

salt and freshly groundblack pepper

Method

Mix the tuna, breadcrumbs, eggs, mayonnaise, spring onions and garlic together in a bowl. Season with salt and pepper.

Divide the mixture into 8 and shape into patties. Cover and place in the fridge for 10 minutes.

Heat the oil in a large frying pan over a medium-high heat. Cook the burgers in batches for 2 minutes on each side, or until well browned and cooked through. Serve immediately.

Not in any way healthy, but melt a spoon of butter in a pan, then grate in lemon zest and some black pepper. Add double cream and a tin of tuna (plus prawns if you have some) and heat gently so cream doesn’t split. Serve over pasta with fresh chopped parsley and more black pepper. Is amazing! You can also add some peas - sounds weird but works really well

Tonno e fagioli - salad of tuna and beans. This makes 2-3 helpings at least.

Ingredients:
Tin of tuna in olive oil (or canned in water, drained, then add some olive oil when you mix salad)
Tin of cannellini beans, drained and rinsed
Big bunch of parsley, finely chopped
Lemon juice, lots (at least one lemon, I like more)
Salt, pepper to taste
Onion in some form - some thinly sliced red onion or finely chopped spring onion, including the green part - or a mixture of both - brown-skinned onion would be OK if that's all you have, but use less, as it's stronger in flavour

All you do is empty the tuna into a suitable bowl, with its oil, flake it a bit; stir in the beans, some lemon juice, most of the chopped parsley, some of the onion. Season well. Taste and add more lemon juice and/or olive oil if you think it needs it. Finish off with the last bits of onion and parsley sprinkled over the top. Serve with some very good bread and salad leaves if you like. Thin slices of raw red pepper would make a nice addition to the salad.

You could do this or similar with other beans or chick peas or whole lentils.

Tuna & sweetcorn potato cakes.

Make some mashed potato
Add a tin of drained tuna and a small tin of sweetcorn - some chopped spring onion is nice too
Season
Fry until golden brown

We serve ours with baby spinach and a poached egg on top.

I like to boil up some pasta and in another pan fry up chorizo, cherry tomatoes, garlic and paprika in a little olive oil, add the pasta when cooked and tin of tuna also parsley if you have some and heat through. Top with a little parmesan. Spring onion also good. Simple but really tasty.
