What would you do with red lentils?

I realised today I have 4 packets of red lentils in the cupboard. Anyone got any good recipes to help me use them up?

Dahl or lentil soup

I think they are really good in a tomato based soup with smoked paprika, red pepper and rice.

I love lentil soup but I eat loads of it anyway. Lentil bolognese sounds good, I'll definitely try that. The curry also looks yummy, thanks.

Chorizo, lentil, red pepper stew. Tbh I do a different version of this every time I make it with various additions - spinach, tomatoes, courgettes etc. Depending what needs using up. Just serve with a bit of crusty bread!

I think the red ones are a bit soft for bolognaise.They tend to disintegrate.
Great for soup and thickening.

My mum makes a version of lentil bolognese (we just call it lentil sauce!) that is divine and I’m yet to meet anyone who hasn’t liked it - even my veg-scared DP loves it.

Olive oil (about 1.5 tbsp)
1 large brown onion
Garlic (I use about 4-5 pieces but it depends how much you like garlic)
225g red lentils
1 400g tin chopped tomatoes
Splash red wine
1/2 tsp oregano or mixed herbs
1/2 tsp cinnamon

Fry onion in oil till starting to soften. Add garlic, fry till fragrant/1-2 mins. Add chopped tomatoes, red lentils, wine, herbs, cinnamon & then rinse tomato can and fill with water - add to the mix. Add about another half can of water. Leave to simmer on low heat for 35-45 mins. Stir frequently. When lentils are soft and it’s a thick sauce rather than watery, add salt and pepper to taste.

Serve with an abundance of pasta and Parmesan (also tastes lovely with mature cheddar).

Make some dahl and spinach curry. Serve with rice or roti and kachumber chopped salad. Or yoghurt.
Warning the dahl and spinach needs a substantial amount of butter, Or ghee or oil fried with onions, garlic and chilli to make it extra delicious.

I do a roasted butternut squash, sweet potato and chilli (flakes) soup with red lentils.

Oh my @paddingtonbearsmarmalade that sounds delicious. I'm definitely trying that.

I add them to bolognaise/chilli/cottage pie.

Dal and lentil soup are my favourites but I add them to any casserole type things that need thickening up - particularly good when something in the slow cooker is a bit watery

I was going to say lentil bolognese but beaten to it! Lentil and veg soup another classic and very tasty and healthy. Grate 3 carrots, finely dice two/three big potatoes and two/three leeks, cook in stock with a cup of red lentils. Add loads of parsley and lots of salt and pepper. ‘‘Tis delicious, easy and healthy.

Sausage casserole. Sausages and mixed beans, tinned toms, onion, pepper, peas, sweetcorn, celery, a good handful of lentils.

Plus paprika and chilli powder.

My DP does an amazing dhansak - he does a chicken one like this but also uses leftover lamb with spinach

Shepherd pie.

Fry finely diced onion, red pepper and carrot til soft. Add red lentils, veggie stock and tinned tomatoes and simmer. Stir through sweetcorn and crumbled blue cheese. Turn into a dish, top with mashed potato (or mix of potato and sweet potato). Top with either more crumbled blue cheese or grated cheddar. Hot oven til top is bubbling.

Sauté onion in butter, add lentils and some stock, when it's nearly absorbed, season add mix herbs, whisk an egg in and a ruck of strong cheddar.

Top with more cheddar and bake

I make a lentil bake. Onion, garlic, shredded carrots, mushroom spinach, equal amounts of lentils and rice, cook everything, mix in with egg and cheese, bake.

PS a tip - if you soak the lentils first, throw away the water and then cook they don't make you fart as much

There's a Rose Elliot recipe for lentil and cheese bake which is very similar to Fabulously's recipe and very tasty! It's just lentils, onion, cheese and seasoning (no egg in this one!) but it somehow manages to be more than the sum of its part.
