What would you do with red lentils?

I realised today I have 4 packets of red lentils in the cupboard. Anyone got any good recipes to help me use them up?

Tadka Dahl, definitely.

I’m not sure of the recipe we use as my OH makes it. I’ll ask him later if he has a specific one (he generally wings it with cooking). It’s so delicious, I could eat bowlfuls of it.

I have just tended to add them to things to bulk out/thicken but like some of these ideas - especially the chicken dansak.

I also love making dhal. I too can eat it by the bucket and with the amount of butter I add, not sure it's that healthy!

I read a great tip for dhal - really, really caramelise the onions. Makes a huge difference.

I put them in butter chicken in the slow cooker. Butter (about 1cm thick slice). Tin of coconut cream. Onion slices. Garlic clove, chopped. Ginger, thumb sized piece chopped. 1 tbsp tomato puree. Maybe some cardamom pods if I have them. 1tbsp curry paste, 2 tsp garam masala. Chicken stock cube. 6x skinless chicken thighs and then red lentils- probably 3 tbsp but I dont measure. Cook for 6 hours. Its yummy. Sometimes I make it with chickpeas and veg stock

Yes to dhal. I make it with coconut milk and a shedload of spices, then add onions fried with more spices and lots of garlic. It freezes well too.

Nigella's veggie chilli is nice, and red lentil based.

they won't go bad if stored correctly.
I add them to tomato based sauces (thickens them).

I do a lentil shepherd's pie which me and the baby love (but her Dad does not I should say for balance)
