What to serve with roast chicken

Has anyone got any suggestions for what to serve with a roast chicken that's not a dinner? I have a couple of chickens in the freezer from the butcher that need using. We're not a massive fan of dinners every week so don't have them often.

What else can I do with it instead?

We often have a roast chicken with just a green salad and nice bread. Or you could do a curry out of it...cut it up and take off the skin after cooking and make soup/curry to freeze.

Roast veg. That's what's on the menu here today to go with the roast chicken. I roast sweet potatoes, parsnip, carrots, onion, courgette, pepper, few cherry tomatoes and olives. I have veggie sausages with mine.

What exactly do you mean by a dinner? Full on roast potatoes and veg I guess, but anything like evening meal too? Or not?

We have roast chicken cold with baked potatoes and salad but that’s still our evening meal so is that too dinner-y?

Pulling my socks up yeah, I mean a typical Sunday roast dinner with lots of vegetables, photo, gravy etc. My toddler hates veg and any potato except for chips, and it's just too much effort and washing up to do one often

Chicken roasted with lemon served with a pesto pasta
Slow roasted barbecue chicken with salads and pitta to stuff it in.
Any chicken recipe really.

We never roast chickens whole. Too lazy. I chop it up in bits first (thighs, drumsticks, breasts on the bone, wings, back as a separate strip), season, in the oven for about 40 minutes at 200 (or a bit longer at 175 if you’re mr bani, with a lecture on how it makes chicken moister). Serve with rice, use cooking juices as “gravy”. Salad, carrot sticks or whatever we have the energy for as a side.

Cook them, then when cool, joint them and re freeze as it’s fine to freeze them once cooked even if they were previously frozen raw. Then you have chicken for whatever you want to make from the above suggestions or for fajitas, or over pasta, in salad / sandwiches or whatever.

I was going to suggest the same as Lostmyunicorn but instead of jointing them after roasting, to strip all the cooked meat off and freeze. Then you have a pile of boneless cooked meat that you can use to make fajitas, soup, curry, mix into fried rice, chicken pot pie, Burmese chicken salad, add to instant noodles with veg and tofu, chinese chicken with sesame sauce etc etc.

Crispy fried chicken quarters ala KFC or siuthern style, coleslaw, wedges, corn on the cob.

Fried chicken with rice or couscous.
Boil chicken shred meat and make a pie or soup with noodles (broth).

Chicken, hummus and fried onion pine nuts in pita or pesto and mozarella bread pie, you hollow the bread and slice it like cake or loaf.
