What to serve with roast chicken

Has anyone got any suggestions for what to serve with a roast chicken that's not a dinner? I have a couple of chickens in the freezer from the butcher that need using. We're not a massive fan of dinners every week so don't have them often.

What else can I do with it instead?

You could serve with either chips, mash, salads, corn, rice etc. Jamies turkey and leek pie is pretty good. Sub for chicken and ignore the chestnuts

I’m making the Barefoot Contessa ”Engagement” Roast Chicken as we speak, with mash and green beans. Supposedly after eating this any boyfriend will propose(!) and it’s rumoured that Megan Markle used it on Prince Harry...

Apart from that BS, it has loads of lemon, garlic, olive oil or butter, onions, salt and pepper and is cooked at 220 degrees C for 1.5 hours (2.5 kilo chicken). Curious to see if it lives up to the hype!

FWIW I usually just make my 1.3kg chicken in one of those herby roasting bags and nobody complains. Lots of gravy, too.

I cover ours in a rub of cumin, garam masala, curry powder and seasoning and serve with a spiced salad of cucumber tomatoes chickpeas coriander lime and a seasoned yoghurt with cumin lime and salt and serve with naan.

Or we do it peri peri style with rice and corn on the cobs

Or you could make fajita style wraps

Or you could do hot chicken sandwiches with nice fillings

I rarely do a traditional roast either. I like roast chicken with:

  • Giant cous cous and feta in a Herby dressing
  • various Mediterranean veg
  • dauphinois and green salad
  • puy lentils,roasted butternut squash and rocket in a vinegarette
  • orzo cooked in chicken stock and green beans

Well, that was a delicious roast chicken. Maybe not good enough to propose for, but one I’d definitely make again.
Following these suggestions, I think I’ll put the leftovers into a bulgur, feta and pomegranate salad.

I can recommend the buttermilk roast chicken from Salt Fat Acid Heat. Google Samrin Nosrat buttermilk chicken and you’ll find it. That’s the only time I bothered to roast one whole. I don’t really see the point except for looks and the wishbone!

Having stripped the chicken for dinner, it’s reminded me why I prefer whole bird roasts.
I HATE stripping chickens. There’s something of the charnel house about it. That and eating drumsticks with your fingers.

So when I cook a roast chicken I serve the rest of the family the legs, thighs, (sometimes do an extra thigh as they want it x3) wings and a small amount of breast. They attack it with enthusiasm and I go for just sliced breast.

The only thing I do enjoy “picking” is the oysters!

Spatchcock the chicken
Marinade overnight (olive oil, seasoning, thyme, fresh ginger, chilli flakes and garlic - also I like to add plain yogurt kefir)
Cook for 25 mins skin side down - turn and cook for further 20 mins or so - then eat with salad (or mashed sweet potatoes and peas dipped in the gravy)
