Most vegetarian recipes don’t have nuts so this shouldn’t be too difficult! Google ‘easy vegetarian recipes’, ‘vegetable curry’, chickpea curry’, vegetable stir fry’, roast vegetable pasta’, ‘pasta bake’ etc and see what you fancy. Are you looking for something fancy and impressive or super easy or somewhere in between?

Sorry...I shouldn't have said main, I should have said something to have with a roast dinner. I just saw the vegan thread and thought I'd ask for people's recommendations...maybe I should just Google instead!

How fancy does it have to be? If non fancy I'd just go with some veggie sausages (Birdseye ones are nice), if fancy, then maybe a Wellington of some kind (this one has mushrooms bit you could leave them out)?

The celeriac thing looks lovely.

Something tartlike is the sort of thing I was thinking - it is only dd1 and I who are veggie, I'll be cooking a roast for lunch so dd1 and I can have trimmings, and a 'safe meal' got ds who has a restricted diet - there will be 8 of us, so nice if we can roast/veggie thing + trimmings.

Smoked tofu dipped in a mix of cornflower and paprika (and sesame seeds if they aren't off the menu along with nuts) - fried until crispy on the outside and served with a smoky veggie goulash and sour cream

Vegetarian wellington but not a mushroom one. I make mine with puff pastry and ingredients vary but include lentils, squash, peppers, garlic, rosemary, thyme, chilli, veg stock, carrots, any other veg you like.

Sainsbury’s do a cracking recipe for a Moroccan spiced beetroot and butternut Wellington.

We’re not veggie but make this a lot and it goes well with a roast. Last couple of times we’ve added goats cheese but I know that can be a bit hit or miss.

Should add, I came up with my recipe because I was sick of all the rubbish mushroom wellingtons and I wanted my own for Christmas dinner! It’s amazing with veggie gravy and trimmings etc

I've been fed one too many goat cheese items so gone right off it but there's a fab beetroot and squash crumble with feta in an old Asda mag - will try find it. It's delicious and the meat eaters finished it off last time I made it

No goat's cheese. It seems to be absolutely everywhere with no alternative unless it's mushroom risotto or mushroom stroganoff, or butternut squash.
