Tagine in slow cooker (basically throw ingredients & leave) carrots, sweet pots, butternut squash, onions capsicum chickpeas small amount of passata plus 1 teaspoon cumin& coriander half tspoon paprika & mint & dash tabasco (if liked) salt & pepper
place onions & capsicum & spices in first with oil cook for hour than add rest &mix together & cook for 2/3 hours add herbs at end

Haven’t written in up yet I’m afraid as it was an experiment but it is quite simple. . .

Ingredients
Butternut squash
Puy lentils
1-2 carrots
Butternut squash
Bell peppers
1 egg
Thyme
Mushrooms (optional)
Pre bought pre rolled pastry! (Makes 8 individual wellingtons)
Vegetable stock

I did the following. . .

Cut Half the butternut squash in chunks and put in a baking tray with
1 diced red chilli
A few sprigs of rosemary
3 crushed garlic cloves
Add a small amount of vegetable stock for moisture

Mix together and Roast in oven for 20 mins around 200 degrees until squash is tender then dice until very small pieces

Add finely diced carrot, peppers, mushrooms, sage and any other vegetables.

Mix in puy lentils.

Ensure mixture is nice and dry to prevent leakage!

Divide puff pastry into 8 and wrap tightly into wellingtons. Brush with egg.

Cook for 20-25 mins at 200

Serve with a roast!

Oh and they also freeze well if you have too many!
