Best use of leftover roast chicken that isn't the standard risotto?

I normally use leftover roast chicken in a chicken risotto (chicken & pea, or my own creation chicken, butternut squash and leek) or stir-fry, or salad but want some more interesting ideas!
I have some from 'Save with Jamie' recipe book too.

I think I want a risotto but something different from the 'classic' chicken one! I'm feeling a bit uninspired....

I often make tacos/burritos using leftover chicken. I make some fajita vegetables and add it in. It's delicious.

Chicken curry, bbq chicken lasagne, chicken stew/casserole, chicken pasta bake, fajitas. I'm a big fan of cooking a chicken to last a few meals.

Today I am making chicken pie but am mashing up celeriac to put with mashed potato as a topping. So, not a pastry pie but pure comfort food.

Or toad in the hole but with chicken. Shred the chicken, heat oil in a cake tin, add yorkshire pudding mix then scatter chicken over the bottom. Cook as normal for a large yorkshire. Serve with leftover gravy (or bisto) and green veg. This served me well when single!

Curry, soup or pie. Leftover chicken pie is my speciality here. Fry leek, streaky bacon and a little garlic until nice and soft, make a white sauce and add a teaspoon or so of wholegrain mustard, salt, pepper and when everything has cooled down combine it all with cooked chicken and it's delicious. Also make one which is leek, garlic, couple of tomatoes diced, curry powder, peas and coriander, then tablespoon of flour and chicken stock and leftover chicken. I love pie!

Chicken shammi kebabs - Puree it, add tempered Indian spices, Pureed fried onions / garlic / ginger / green chilli / coriandeer , shape and then fry into mini kebabs

Chicken soup. Boil up the bones with onion, peppercorns, carrot and celery for 1.5 hrs or so. Then strain, keeping the stock, and taking all the little bits of chicken off the bones. Put stock with chicken in fridge until needed then boil with fresh carrots, onion, celery and barley until barley cooked. Salt to taste and Bob‘s your uncle!

Add matzo meal dumplings to the soup. Make a filling meal of it. Easy to make and very Yum.
