Best use of leftover roast chicken that isn't the standard risotto?

I normally use leftover roast chicken in a chicken risotto (chicken & pea, or my own creation chicken, butternut squash and leek) or stir-fry, or salad but want some more interesting ideas!
I have some from 'Save with Jamie' recipe book too.

I think I want a risotto but something different from the 'classic' chicken one! I'm feeling a bit uninspired....

I do a jambalaya / paella type thing - look up lemon prawn and chorizo rice - I follow that but add leftover chicken or pork sometimes with prawns as well, sometimes just the chicken or pork, but always with the chorizo.

I also just do it with mushrooms baked in a cheese sauce then serve with rice and salad.

If you fancy a risotto but a slightly differen tone, try shallots and wild mushrooms with chicken. Or lots of lemon zest and juice with fresh thyme.
You could also shred it with some jerk spices, rice and beans.
Or make a chicken noodle soup.

I make a massively inauthentic but still delicious Tom Yum Gai soup with leftover roast chicken. It's not at all deserving of that name, more of an 'inspired by' effort. I sometimes even put noodles in it, I know it's wrong but I like the carbs. So shoot me. But try the soup first, it's really good...

@CaraConcerned - if you are doing a pie, buy the pastry - it makes the whole thing a breeze.

I make a sticky Asian marinade thing that goes well with chicken. Shred the leftover chicken, mix in runny honey, soy sauce and Chinese five spice, and fry until it goes dark and sticky. Serve with rice.

Puff pastry, left over chicken and veggies cut up, grated cheese.
Either use pie maker or cut up pastry.
Places mixed chicken, veg, cheese on one half. Fold over pastry and crimp edges, brush with milk.
Into 180 c oven for 15-20 minutes

Chicken pie; stock cube in white sauce to make it good and savoury, add peas, leeks, whatever veg then throw on puff pastry or mashed potato lid, with grated cheese if mash. Whole family love it.

Never heard of leftover chicken risotto but the standard growing up was enchiladas/chicken and mushroom pie/curry/pizza!

I either use it for a curry or I buy half baked rolls, stick them in the oven and then have chicken butties with the hot rolls and salted butter 🤤

Chicken, carrot and bacon pie.

Fry onions, carrot and bacon until veg sort and bacon starting to brown. Throw in stock and water. Bring to boil, reduce and simmer. Add chopped left over chicken (you can strip the carcass right down and use all the dark meat too). Simmer for a bit longer, then thicken.

Delia's shortcrust, build the pie and cook. Fab with some potatoes, green veg and extra gravy or tomato ketchup if you are heathens like DH and DD

We either do curry or Hairy Bikers Speedy Chicken and Vegetable Pot Pies which have filo pastry on top, which are quick and easy to make (you buy the filo pastry)

Croquetas de pollo. Chicken croquettes. You mix the chicken into a really thick roux sauce, roll in breadcrumbs and fry. My favourite Spanish tapa. Its probably best to Google a recipe for it. I've not included seasoning because I can't remember.

My son’s favourite thing was roast chicken lunch pasty. Just make some pastry, through chopped up leftovers in, moistened with a little bread sauce. Make pasty shapes and bake.

Chicken and rice curry soup is substantial. Basically carrot soup with onion, leek, potatoes whatever is left over. A spoon of mango chutney, curry powder, a splash of yoghurt if you have some. Whizz up. Add shredded chicken and easy cook rice that can be cooked in the soup for fifteen minutes.

A muck up with rice, chorizo, chicken, diced carrots, peas, tomatoes Cajun spice or paella spices.

Cannelloni made with chicken and walnuts. They make the chicken go a long way.

Chicken and chorizo baked rice - sauté finely sliced onion with chorizo and some smoked paprika, in an oven proof casserole. Add sliced peppers and the chopped up chicken (I do it with chicken thighs, but I don’t see why it wouldn’t work with leftovers), basmati rice, passata and stock (a bit less stock than the recommended amount of water for the rice you use - because the passata adds liquid). I add a tin of cherry tomatoes too, but that’s not vital.

Damp a sheet of baking parchment, scrumple it up, flatten it and cover the top of the rice mixture. Put a lid on, and put in the oven at about 180 for 40 minutes, or until the rice is cooked.

You can do everything earlier in the day, and just bung it in the oven later - I find that, by the evening, my get up and go has got up and gone, so I like things where I do the work earlier in the day.

Cold Campbell’s concentrated chicken soup - mix in chicken and sweet corn.
Place in one half of puff pastry rectangle. Fold over. Crimp sides, brush with egg and put in oven TIL golden brown
