I love soup on a cold autumn day but only ever make leek and potato, does anyone have any easy tasty vegetarian soup recipes they want to share please?

Tomato & red lentil is nice & filling, out some chilli or paprika in for extra warmth.
XH used to make a nice courgette soup which was really quite velvety but I'm not sure how he made it.
Tomato & roasted peppers.

Also made a cauliflower & gruyere one one which was like smooth cauliflower cheese - absolutely gorgeous.
Oh and french onion.

Honestly, I usually just simmer and blend whatever vegetables I have in the fridge with some onion, stock and mixed herbs. I havent made a bad one yet! Not terribly helpful but maybe some soup experimentation is in order?

The River Cottage butternut and peanut butter soup is epic. Highly recommend it. Tastes like much more than the sum of its parts.

Red Thai lentil soup.

Dice onions and carrots and soften in oil. Add red Thai curry paste, red lentils and vegetable stock - not too much, because you will add coconut milk at the end, so you don’t want too much liquid at this stage, simmer until the lentils are soft, adding more stock if it gets dry. Blitz until smooth with a can of coconut milk.

A mixed vegetable minestrone, with a moderately tomatoey base flavoured with Mediterranean style herbs, beans instead of pasta, & finished with a dollop of pesto.

Also, butternut squash & sage.

Buy a soup maker and you can literally chuck anything in, roughly chopped, with stock and whatever flavouring you fancy, come back 20 mins later and lunch is served! One of my best ever purchases. Other advantage is you don't need to use any oil so they are super healthy and low in calories/fat. Whenever I'm having a fast day a hearty soup is my go to - usually under 100 cals per portion - I sometimes add a toasted thin to act as croutons.

Current faves:
courgette, spinach and mint
curried lentil & tomato
red pepper and tomato
squash and anything!

I Keep bags of frozen carrots and frozen leeks in the freezer. I tip some from each bag into a saucepan along with a couple of handfuls of red lentils and a little pot of knorr chicken stock. Boil and whizz with a stick blender. When I serve it I normally add some spice with either dried chill flakes or Sriracha sauce and maybe add a spoon of Greek yogurt.

It is under 4 minutes work, cheap to make, very healthy and tastier than it sounds.
