Sweet potato and red pepper... yum! Minestrone too without bacon/Parmesan rind and with vegetable stock instead of chicken. Had that last night!

We've moved this over to Food/Recipes! My favourite is potato and leek by the way.

This is delicious made as per recipe. Also good with coconut milk and fresh coriander stalks and leaves. Also great with carrots or Broccoli added.

There’s a Nigel Slater recipe - chorizo and bean stew - that Imthink is more of a soup than a stew, and could easily be done without meat.

It starts with diced onions, carrots and celery, and the chorizo, being softened in oil, then you add stock and a tin of cannellini beans and a couple of pieces of orange peel, and simmer until the veg is soft. If you put smoked sweet paprika in, instead of the chorizo, it would be a delicious vegetarian soup.

Dried pea and pesto I add lots of leafy green veg to offset the sweetness of the peas, blend and add a hefty dollop of pesto to stir in (DD is a pea hater), this can be cooked with rice although not too much as it does expand

Red bean and root veg with rosemary - onions, carrots, potatoes plus a tin or two of red kidneys beans, stock and a generous pinch of chopped rosemary, 10 minutes in a pressure cooker, handy for when you don’t have time or the desire to cook. Serve with small pasta shapes

Chick pea creamed soup - onions sautéed with cumin seeds, Chuck in a tin or 2 of chick peas and a teaspoon of smoked paprika, cook for about 10/15 mins, blend, then add copious amounts of lemon juice and salt to taste before serving. Drizzle each serving with a spiral of olive oil.

leek and butter bean, ignore the bacon
It's really lovely, especially with the crispy kale on top has overtaken my previous favourite leek and potato.

Have a look at Rose Elliot for lots of veggie soup recipes.

We're doing 5:2, so currently eating a fair bit of soup. Tonight we had her pea soup which was delicious. can post recipe if wished.

I do lentil soup a lot, although am getting a bit bored of it.

I had an amazing cheesy cauliflower soup in a restaurant and really want to try making similar this Autumn (on a non-fasting day!).

Normally butternut squash or roasted red peppers, tomatoes and basil.

Tonight I made a big pan of minestrone

Here's a few ideas. The Beetroot one is my favourite.

My husband likes the minestone. He's not veggie so I cook bacon lardons on the side and add them to his bowl at the end.

Delia's leek and butternut squash recipe is awesome. I make it nearly every week in the winter. I like spice so I add roughly chopped red chilli pepper and a couple of garlic cloves too...

BBC Good Food has a Leek and Courgette soup with Goats Cheese and Basil. It is the most tasty soup I have ever made or eaten. Please try it!
