Tinned corn beef. What can I cook.

DH has just been food shopping and has brought home 8 tins of corned beef(10p each but have a few dents)) they all have an expiry date for the end of June. Yes I can put it on a sandwich but can anyone give me any other ideas.

You can make a bolognaise-type pasta sauce, using corned beef instead of mince. Just your generic, basic sauce: sweated onions, chopped carrots, peas etc, tinned tomatoes/tomato puree, wine, garlic etc.

It can be used in many recipes that call for mince, eg shepherds' pie, rissoles.

I love corned beef in sandwiches, but corned beef hash and corned beef fritters are rank.

My nana's recipe:

Fry a chopped onion until soft
Add a tin of chopped tomatoes & heat through
Add chopped / sliced corned beef and stir through until all broken down
Crumble in a beef oxo cube and stir until combined

Serve with fresh, hot chips and bread & butter Smile

Or corned beef pie if you are not from Wigan.
Disclaimer, I personally hate this but your DH kind of deserves to have it inflicted on him.
Chop up potatoes and carrots into 2cm dice add chopped onion. Add boiling water and an oxo and boil the hell out of it. After about 15 mins add the cubed tin of beef, thicken the sauce with gravy powder if necessary and transfer to a pie dish.
Cover with shortcrust pastry and bake for half an hour or so.
Serve with pickled red cabbage.

Could you also use it cubed in a sort of Ceasar salad? With possibly fried onions and lots of honey and mustard dressing?

Do you have a dog? It smells like dog food and when it's cooked it's like hot tinned dog food. Revolting. Dogs like it though and it can be used as fishing bait apparently.
