Tinned corn beef. What can I cook.

DH has just been food shopping and has brought home 8 tins of corned beef(10p each but have a few dents)) they all have an expiry date for the end of June. Yes I can put it on a sandwich but can anyone give me any other ideas.

Corned beef hash.
Fry onion and red peppers. Add some cooked boiled potatoes (chopped up or mashed, whatever you have left over or decide to prepare). Fry until crispy.
Mix your corned beef in a bowl with worcestershire sauce and Colman's mustard, salt and pepper.
Add the beef to the pan and give it all a mix. Throw in some fresh parsley. Leave to cook out so the bottom goes crispy.
Serve with avocado ... baked beans... Tobasco sauce... Brown sauce... it's delicious!!

I love corned beef hash but 8 times would be too much.

There is rick stein’s recipe with cabbage and the hairy bikers have a pie recipe if you want bit more sophistication.

Beany bake

Tin of baked beans in base of dish
Fried onions on top
Then 1cm cubed corned beef
Then slices of cheddar dotted with marmite
Then mashed pots with butter and
Sprinkle with cheese , in oven until golden.
Bliss .
We also do it with cutted up veggie sausages ( not that’s any use to you Grin

The pie is probably freezer friendly for kicking the problem into the future when you might like corned beef again (hash most likely isn’t).

Sandwiches are nice with plenty lettuce and chutney.

Make a standard tomato sauce (onion, tinned tomatoes, a little water) and add a teaspoon of marmite to it.

Get a lasagne dish and grease the bottom. Add a generous layer of thinly sliced spuds, then add on the sliced corned beef and the tomato sauce and finish with a thin layer of spud slices. Bake in oven for about 60 - 90 minutes. Delicious.

Donate it to your local Food Bank, corned beef is one of the most popular things we are asked for.

If you keep it you really don’t need to worry about the use by date, it will keep for a few years Grin.

I was going to suggest food bank too, are they allowed to take dented tins though? Genuine question.

Maybe keep a couple and donate the rest. Even if you keep 3 tins and donate 5 for example, you've still got them really cheap.

Corned Beef rissoles - mix the corned beef with some mash and a packet of prepared Paxo stuffing or similar. Shape into patties, coat with flour and fry. Delicious!

I don’t think you need to worry about the best before date on something like corned beef in a tin. I would use these up during the next year.

Corned beef hash but I've never made it with diced potatoes, only mashed. Served with beans, cheese and brown sauce, or with vegetable and gravy.
Someone once told me they make corned beef rice but I've never tried it.

I chuck a tin or two of corned beef in the slow cooker with potatoes, carrots, onions, tinned tomatoes, whatever veg needs eating up and cook all day. Yummy!

Made into chilli con carne
