Pasta sauces without tomatoes?

Looking for some ideas on sauces as I’m getting sick of tomatoes (tinned and fresh!), Every recipe I come across calls for a tin of chopped tomatoes. It’s all just too tomatoe-y.

It doesn’t even have to specifically be a pasta sauce, just something I can chuck in with most things e.g diced chicken and so on.

Liking the sound of cacio e pepe - will definitely make that.

I hate tinned tomatoes, and am fussy about fresh ones, so find pasta quite difficult.

Caluccio's courgette pasta is nice - no sauce but lots of butter, so it's not dry

Roast a pan of vege - peppers, onions, red onions etc then mix with a pot of garlic and herb Philly and warm through. can add red pesto too, and thin down with milk or water as needed.

Roasted butternut squash, garlic and sage, with cream or creme fraiche (or Philly) - can stir other stuff in too - spinach/steamed green beans/frozen peas or just a pile of rocket at the end

I've been known to use creamed mushrooms as a quick non tomato sauce.

Also as per pps creme fraiche or cream cheese based sauces, also olive based ones

Soften red onion, add chopped chorizo and chicken. When cooked add a jar of red pesto , cream and chilli sauce to your taste .

Chicken strips marinaded in Cajun spices, fry until sealed then add onions and peppers, fry until soft add a cup of chicken stock, simmer to reduce then stir creme fraiche through.

Carluccio’s penne with spinach balls and grated courgette is yummy. I had my DD choose a recipe she could make herself for dinner and she chose that. Not a tomato in sight.

If I have leftover roast meat I sometimes fry some onion/leek (sometimes with a bit of chopped bacon) and then either cook out some flour with stock or add any gravy I have leftover and bring to a nice reductive simmer. Toward the end of cooking (ie it reaches the consistency I’d like and the pasta is almost done) I chuck in some frozen whole spinach nuggets and let them defrost, and the leftover meat. Always hold back some pasta water because it will always dry out and you want to bring it back to sauciness. Again, no tomato!

Smoked salmon pasta with sweet chilli sauce and creme fraiche is also delicious.

Courgette: Fry grated courgette with olive oil and garlic until it is soft. Go slowly so it doesn't brown, you want it to wilt more than brown. Cook the pasta and retain a cup of water before you drain it. Mix through the courgette, add salt and pepper, and big handful of Parmesan, and enough of the reserved water to moisten it.

Jack Monroe has some great pasta recipes, loads not tomato based. Ones I really want to try is a carbonara with Brie which looks amazing.
