Pasta sauces without tomatoes?

Looking for some ideas on sauces as I’m getting sick of tomatoes (tinned and fresh!), Every recipe I come across calls for a tin of chopped tomatoes. It’s all just too tomatoe-y.

It doesn’t even have to specifically be a pasta sauce, just something I can chuck in with most things e.g diced chicken and so on.

Pesto? Cheese/white sauce? Soy sauce? Hoi Sin Sauce? Philadelphia? Thai style with coconut milk?

I tend to use tomato as a basis for most sauces, but jazz it up with lots of different herbs/spices.

Fry smoked bacon and garlic, add a handful of spinach (can leave out). Add in small pot of double cream and a handful of strong cheese. Heat til cheese has melted and check seasoning then add to pasta. Can chuck in some basil too. Easy and really tasty.

white sauce, you can adapt it with chicken, bacon, veg (broccoli and garlic works super well). Sometimes I make a white sauce with roast peppers and smoked salmon with pasta, it's very popular in my family.

I do a mustardy one with spaghetti and meatballs. About 200ml of chicken stock, desert spoon (or two) of wholegrain mustard, squidge of honey. Add that to the meatballs as they're cooking and reduce it down, then add a dollop of creme fraiche at the end.

for plain pasta (or spinach ravioli) then I really recommend a walnut sauce - delicious!

Jamie Oliver does one that we love.
Glug of olive oil.
Lardons or (about 6) cut up streaky rashers (ideally smoked but doesn't matter)
A chilli (I use one birds eye for 4 people)
Fresh thyme
Add sliced mushrooms. I find chestnut ones best as less liquid comes out of them.
Then add a pot of creme fraiche
Black pepper.

If you want it more substantial add chicken with the first lot of ingredients.

Really quick!

Browned butter with parmesan is delicious and incredibly easy. You can add absolutely anything to it.

gravy pasta

fry pack of beef mince drain fat,put to side.fry onions add to mince leave to side.Melt 150gr butter and add enough flour to make a paste.Gradually whisk in 1500ml beef stock(i use 4 beef oxos),heat till thickened.Whisk in tub of sour cream,then add beef ,simmer 5mins.Add peti poi peas and cook till done.

Pinch dried chilli, olive oil and parmesan

Fry and onion and a garlic clove in a good glug of olive oil, add some diced chorizo and streaky bacon and fry until the oil goes nice and red. Boil fussilli and add a handful of shredded savoy cabbage 5 minutes before the pasta is cooked, drain and add to the pan of chorizo, mix well and grate in a load of parmesan and black pepper. Absolutely delicious and ruinous if you're counting calories.

Pasta Primavera, spaghetti (or your favourite pasta) with a selection green vegetables such as peas, broad beans, broccoli florets, asparagus, spinach, chopped green beans, Roman cauliflower florets etc.

Cook off some pancetta, melt a block of Gorgonzola into it, add creme fraiche, lemon juice, black pepper and peas. I put sliced sausage in as well, stir through cooked pasta

Hummus is nice with pasta. Stir fry some veg - onions, peppers, broccoli, baby corn, carrots then add a couple of spoons of hummus then stir in cooked pasta.
It tastes sort of dry with some texture

Or tonight we're having pasta alla genovese with sliced potatoes (carbtastic) and a pesto made from basil and cashew nuts.
